Description

This Peanut Butter Granola recipe combines the rich flavors of natural peanut butter and honey with the wholesome crunch of oats and roasted peanuts. It's baked to a perfect golden crisp, making it an ideal homemade snack that's both satisfying and nutritious. Easy to prepare and perfect for breakfast or on-the-go energy boosts.

Ingredients

Wet Ingredients

  • ½ cup salted natural peanut butter (fresh and runny)
  • ½ cup honey
  • 2 Tbsp olive oil
  • 2 tsp vanilla extract
  • ¼ tsp salt (optional)

Dry Ingredients

  • 3 cups old fashioned oats
  • ½ cup dry roasted and lightly salted peanuts

Instructions

  1. Preheat Oven: Position the oven rack in the middle and preheat the oven to 325°F. Line a baking sheet with parchment paper and set aside.
  2. Mix Ingredients: In a large mixing bowl, combine the peanut butter, honey, olive oil, vanilla extract, salt, oats, and dry roasted peanuts. Stir thoroughly to ensure all the oats and peanuts are evenly coated with the wet mixture.
  3. Spread Mixture: Transfer the mixture onto the prepared baking sheet. Spread it into a thin, even layer to ensure the granola crisps up nicely.
  4. Bake and Flip: Bake the granola for 12 minutes. Remove the tray, flip the granola gently with a spatula, pressing it back into a thin layer, then bake for an additional 8-12 minutes until it turns medium golden brown. Check doneness by cooling a small piece; it should harden as it cools.
  5. Cool and Store: Allow the granola to cool completely on the baking sheet for 30-60 minutes to crisp up fully. Once cooled, break it into chunks and enjoy or store in an airtight container.

Notes

  • Use natural peanut butter that is fresh and runny to ensure even coating and flavor.
  • Spreading the granola in a thin, even layer is crucial for crispy granola.
  • Flipping the granola during baking helps cook it evenly and avoids burning.
  • Allow granola to cool fully for the best texture.
  • Store granola in an airtight container for up to two weeks.
