Description

A quick and flavorful Peanut Butter Chicken recipe featuring tender chicken breast coated in cornstarch and cooked in a rich, creamy peanut butter and hoisin sauce. This dish is ready in just 15 minutes and perfect for a satisfying weeknight meal with a delicious Asian-inspired sauce.

Ingredients

Chicken

  • 1½ lb chicken breast, cut into bite-sized pieces
  • 3 Tbsp cornstarch (or almond flour)

Sauce

  • ¼ cup peanut butter
  • ¼ cup hoisin sauce (or teriyaki sauce)
  • 3 Tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp garlic, minced
  • ⅔ cup water

For Cooking and Garnish

  • 2 Tbsp cooking oil (for frying)
  • ½ Tbsp sesame seeds (optional for topping)
  • 1 Tbsp green onions, chopped (optional for topping)

Instructions

  1. Coat the Chicken: In a small mixing bowl, toss the chicken breast pieces with cornstarch until each piece is well coated. Set aside to prepare the sauce.
  2. Prepare the Sauce: In a separate bowl, combine peanut butter, hoisin sauce, soy sauce, sesame oil, minced garlic, and water. Mix thoroughly until smooth and set aside.
  3. Cook the Chicken: Heat a skillet over medium heat and add the cooking oil. When the oil shimmers, add the coated chicken pieces. Cook for 5-6 minutes, turning occasionally, until the chicken is no longer pink inside and has a slight golden crust.
  4. Thicken the Sauce: Pour the prepared peanut butter sauce into the skillet with the chicken. Stir to fully coat the chicken pieces with the sauce. Continue to cook for another 4-5 minutes, stirring occasionally, until the sauce thickens and clings to the chicken.
  5. Serve: Remove the skillet from heat. Garnish with sesame seeds and chopped green onions if desired. Serve immediately, perfect alongside steamed rice or vegetables.

Notes

  • You can substitute almond flour for cornstarch for a gluten-free option.
  • Adjust the thickness of the sauce by adding more or less water to your preference.
  • Use teriyaki sauce instead of hoisin sauce for a slightly different flavor profile.
  • For a spicier kick, add a pinch of chili flakes or sriracha to the sauce.
  • Serve this dish with steamed rice or stir-fried vegetables for a complete meal.
