Description

These Pastrami Reuben Egg Rolls are a creative twist on the classic Reuben sandwich, featuring savory pastrami, tangy sauerkraut, and melted Swiss cheese wrapped in crispy egg roll wrappers. Perfectly cooked in an air fryer or oven, they offer a delicious appetizer or snack with a zesty homemade sauce to complement every bite.

Ingredients

Filling

  • 1 1/2 cups sauerkraut
  • 6 ounces pastrami, chopped (or corned beef)
  • 1 cup shredded reduced fat Swiss cheese (preferably Jarlsberg)
  • 8 egg roll wrappers
  • Small bowl of water (for sealing)

Cooking

  • Olive oil spray

Dressing

  • 1/4 cup light mayonnaise
  • 2 tablespoons ketchup
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon horseradish
  • Dash of hot sauce (Frank’s Red Hot recommended)
  • 1/2 tablespoon fresh lemon juice
  • 1/4 teaspoon onion powder
  • Pinch kosher salt

Instructions

  1. Drain Sauerkraut: Use a clean kitchen towel to squeeze out excess liquid from the sauerkraut to prevent sogginess in your egg rolls. Set aside the drained sauerkraut.
  2. Prepare Wrappers: Place one egg roll wrapper on a dry, clean surface with corners positioned as a diamond shape.
  3. Add Filling: On the bottom third of the wrapper, arrange 2 tablespoons (about ¾ ounce) of chopped pastrami, 2 tablespoons of shredded cheese, and 2 tablespoons of the drained sauerkraut.
  4. Start Rolling: Carefully lift the bottom corner closest to you and fold it up over the filling snugly.
  5. Seal Edges: Dip your finger into the small bowl of water and moisten the edges of the wrapper to act as glue for sealing.
  6. Fold Sides and Roll: Fold in both the left and right corners toward the center, then continue rolling tightly into a sealed cylinder.
  7. Repeat: Repeat the filling and rolling process for the remaining wrappers and filling.
  8. Air Fryer Prep: Preheat your air fryer to 370°F (188°C). Spray all sides of the egg rolls evenly with olive oil spray and rub gently with your hands to coat.
  9. Air Fry Egg Rolls: Cook the egg rolls in batches for 10 minutes, flipping them halfway through the cook time until they are golden brown and crisp.
  10. Prepare Dressing: While the egg rolls cook, combine light mayonnaise, ketchup, Worcestershire sauce, horseradish, hot sauce, lemon juice, onion powder, and kosher salt in a small bowl. Mix well to create a tangy dressing.
  11. Serve: Serve the hot, crispy egg rolls immediately with the dressing either on the side for dipping or drizzled on top as desired.
  12. Oven Alternative: If you prefer, you can bake the egg rolls in a preheated oven at 400°F (204°C) for 12 to 16 minutes, flipping halfway through, or from frozen at 375°F (190°C) for 18 to 20 minutes, also flipping halfway, until crispy and golden.

Notes

  • Make sure to fully drain the sauerkraut before wrapping to avoid soggy egg rolls.
  • If pastrami is unavailable, corned beef is a suitable substitute for the filling.
  • You can use reduced fat Swiss cheese to keep this recipe lighter.
  • The homemade dressing adds a signature tangy Reuben flavor that pairs perfectly with the crispy egg rolls.
  • Cooking times may vary slightly depending on your air fryer or oven model; monitor for golden brown color and crispness.
  • For extra crispiness in the oven, lightly spray the egg rolls with olive oil before baking.
