Crispy, golden Parmesan and Truffle Fries baked to perfection with a fragrant blend of garlic, parmesan cheese, and luxurious truffle oil. These fries are oven-baked for a healthier twist on a classic favorite and finished under the broiler for extra crispiness. Perfect as a sophisticated side dish or indulgent snack.
Ingredients
Fries
- 1 lb russet potatoes
- 2 tbsp olive oil, divided
- ¼ tsp salt
- ¼ tsp pepper
- ½ tsp garlic powder
Toppings
- 2 tsp truffle oil
- 2 tbsp finely grated parmesan cheese
- 2 tsp chopped parsley
Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C) and place a sheet pan inside the oven to heat up as it warms.
- Prepare the Potatoes: Cut the russet potatoes into thin fries approximately ¼ inch thick. Place the sliced potatoes in a bowl and cover with hot water. Let them soak for 30 minutes to remove excess starch.
- Dry the Fries: Drain the water from the fries, then transfer them to a dish towel and thoroughly dry until no moisture remains. This step ensures crispiness.
- Season the Fries: Place the dried fries in a dry bowl. Add 1 tablespoon of olive oil, salt, pepper, and garlic powder. Toss the fries to evenly coat them with the seasoning and oil.
- Prepare the Baking Sheet: Remove the preheated sheet pan from the oven carefully. Drizzle it with 1 tablespoon of olive oil to prevent sticking and add the fries, spreading them out evenly without overlapping for even cooking.
- Bake the Fries: Place the sheet pan back in the oven and bake the fries for 18-20 minutes. Keep an eye on them to prevent burning and ensure they become tender.
- Broil for Crispiness: Once the fries are cooked through, remove the pan and use a spatula to flip the fries. Turn the oven setting to broil. Return the fries to the oven and broil for a few minutes until they turn golden and crispy.
- Add Final Touches: Remove fries from the oven and immediately drizzle with truffle oil. Sprinkle grated parmesan cheese and chopped parsley on top for flavor and garnish. Serve warm.
Notes
- Soaking the potatoes removes excess starch which helps produce crispy fries.
- Drying the fries thoroughly before seasoning is crucial to avoid sogginess.
- Using the broiler at the end enhances the crisp texture and golden color.
- Adjust broiling time carefully to prevent burning as broilers work quickly.
- Truffle oil is potent; add it last to preserve its aroma and flavor.
