Description

These Pancake Mini Muffins are a delightful twist on classic pancakes, baked into bite-sized, fluffy muffins perfect for breakfast or snacking. With options to include mini chocolate chips, strawberries, or blueberries, these muffins offer a variety of flavors and are quick to prepare and bake to golden perfection.

Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 tablespoon cane sugar

Wet Ingredients

  • 1 cup whole milk
  • 3 tablespoons butter (melted and slightly cooled)
  • 1 egg
  • 1 teaspoon vanilla extract

Mix-ins

  • Mini chocolate chips (quantity as desired)
  • Strawberries (chopped, quantity as desired)
  • Blueberries (quantity as desired)

Instructions

  1. Combine Dry Ingredients: Whisk together the all-purpose flour, baking powder, and salt in a mixing bowl until well incorporated.
  2. Mix Wet Ingredients: In a separate bowl, mix together the cane sugar, whole milk, melted and slightly cooled butter, egg, and vanilla extract until combined.
  3. Combine Wet and Dry: Add the dry ingredients to the wet mixture and gently fold with a rubber spatula until just combined, careful not to overmix.
  4. Prepare Muffin Tin: Grease a mini muffin tin thoroughly with cooking spray to prevent sticking.
  5. Fill Muffin Tin: Spoon the batter evenly into the prepared mini muffin tin cups, filling each almost to the top. This batter yields about 24 mini muffins.
  6. Add Mix-ins: Top each filled muffin cup with your choice of mix-ins such as 2-3 blueberries, a few small chunks of strawberries, or about 1 teaspoon of mini chocolate chips for different flavor options. Alternatively, leave some plain.
  7. Bake: Place the muffin tin in a preheated oven at 400°F (204°C) and bake for 10-12 minutes or until a toothpick inserted in the center of a muffin comes out clean.
  8. Cool: Allow the muffins to sit in the pan for 2-3 minutes post-baking to set before carefully removing them.
  9. Serve: Serve the mini muffins warm immediately, ideally with maple syrup for dipping to enhance their pancake-inspired flavor.

Notes

  • The butter should be melted and slightly cooled to avoid cooking the egg when mixed.
  • Do not overmix the batter to keep the muffins light and fluffy.
  • Using a silicone mini muffin pan or greasing the pan properly prevents sticking.
  • Customize your mix-ins according to seasonality and preference for added variety.
  • These muffins are best enjoyed fresh and warm on the day they are baked.
