Ingredients
Base
- 16 Oreo cookies
Cheesecake Mixture
- 16 ounces cream cheese, softened (2 - 8 ounce packages)
- 1/2 cup sugar
- 2 whole eggs
- 1 teaspoon vanilla extract
- 3/4 cup large and small Oreo cookie crumbs (chopped with a knife, reserve a few tablespoons for topping)
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line a regular cupcake pan with 16 paper liners. Place one whole Oreo cookie in the bottom of each lined cup; set aside.
- Mix Cheesecake Batter: In a large mixing bowl, use an electric mixer to beat together the softened cream cheese, sugar, eggs, and vanilla extract for 2 to 3 minutes until the mixture is smooth and creamy. Do not overmix.
- Add Oreo Crumbs: Gently fold in the chopped Oreo cookie crumbs using a spatula until evenly combined, reserving a few tablespoons for topping.
- Fill and Top: Using a tablespoon, spoon about two tablespoons of the cheesecake mixture evenly over each Oreo cookie in the cupcake liners. Sprinkle additional reserved Oreo crumbs on top of each cheesecake bite.
- Bake: Bake the cheesecake bites in the preheated oven for 14 to 16 minutes or until the centers are set but not over-baked. The edges will be firm, and the middle should have just set.
- Cool and Chill: Allow the cheesecake bites to cool at room temperature for at least 30 minutes. Then remove the cupcake liners and refrigerate the cheesecake bites for at least 2 hours to firm up and enhance flavors.
- Serve: Optionally, top with whipped cream and more crushed Oreos before serving for an extra indulgent finish.
Notes
- Do not use a food processor to chop Oreos as this will create fine crumbs; hand chop for varied texture.
- Ensure cream cheese is softened to avoid lumps and ensure a smooth batter.
- Do not overbake; the cheesecake bites should be set but slightly jiggly in the center when removed from the oven.
- Chilling for at least 2 hours improves texture and flavor.
- Can be stored covered in the refrigerator for up to 3 days.
- For easier removal, let bites cool fully before peeling liners.
