Ingredients
Vegetables and Proteins
- 1 tablespoon olive oil
- 1 red pepper, diced
- 3.4 ounces can diced green chiles
- 2 cups cooked chicken
- 1 cup frozen corn (or corn from two ears)
- 1 cup black beans, rinsed and drained
Pasta and Sauce
- 2 cups dry penne pasta
- 14 ounces jarred alfredo sauce
Seasonings
- 2 tablespoons taco seasoning
Instructions
- Cook the peppers and chiles: Heat a large saucepan over medium heat. Add 1 tablespoon of olive oil, then add the diced red pepper and green chiles. Sauté until the red peppers become soft, then remove from the pan and set aside.
- Cook the pasta and corn: Pour 4 cups of water into the same saucepan and bring it to a boil. Add the penne pasta and cook according to package instructions. One minute before the pasta is done, add the frozen corn to the boiling water. Once cooked, drain the pasta and corn and return them to the pan.
- Combine ingredients: Stir the cooked red peppers and green chiles back into the pan with the pasta and corn. Add the cooked chicken and black beans. Then mix in the jarred alfredo sauce and sprinkle the taco seasoning evenly. Stir everything well to combine and heat through.
- Serve: Dish out the pasta and top it with optional garnishes such as sour cream, diced tomatoes, and jalapeños for extra flavor and spice.
Notes
- Use fresh corn if preferred; simply cook it before adding toward the end of pasta boiling.
- For a vegetarian version, omit chicken and increase beans or add extra vegetables.
- Adjust taco seasoning to taste for desired heat level.
- Leftovers store well in the refrigerator for up to 3 days.
- Reheat gently with a splash of milk or water to restore creaminess.
