Description

A flavorful one-pan chicken and potatoes recipe that combines tender chicken thighs and drumsticks with baby potatoes, all coated in a zesty lemon garlic marinade and baked to golden perfection. This easy, comforting dish is perfect for a weeknight dinner with minimal cleanup.

Ingredients

Chicken and Potatoes

  • 8 chicken thighs and drumsticks (about 2 ½ pounds)
  • 1 ½ pounds baby potatoes (halved)

Marinade

  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 6 garlic cloves (pressed)
  • 1 teaspoon 7 spice seasoning
  • 1 teaspoon paprika
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the chicken and potatoes evenly.
  2. Prepare Chicken and Potatoes: Pat the chicken pieces and halved baby potatoes dry using a paper towel, then arrange them in a 9 x 13 inch oven-safe rimmed baking dish in a single layer.
  3. Make Marinade: In a small bowl, whisk together olive oil, lemon juice, pressed garlic, 7 spice seasoning, paprika, salt, and black pepper until well combined to create a flavorful sauce.
  4. Coat Chicken and Potatoes: Drizzle the marinade evenly over the chicken and potatoes in the baking dish. Use your hands to toss and coat all pieces thoroughly ensuring every piece is well covered with the marinade.
  5. Bake: Place the baking dish uncovered into the preheated oven and bake for 55 to 65 minutes until the potatoes are fork-tender and the chicken is fully cooked through, reaching an internal temperature of 165°F (74°C).
  6. Optional Broil: If desired, broil the chicken and potatoes for an additional 3 to 5 minutes to achieve a crispy, golden brown finish.
  7. Rest and Garnish: Remove from the oven and allow the chicken to rest for 5 minutes to let the juices redistribute. Garnish with fresh parsley before serving for added color and freshness.

Notes

  • Ensure the chicken and potatoes are thoroughly dried before coating to allow the marinade to stick better and to promote browning.
  • Adjust seasoning to taste, especially the salt and spices, based on your preference.
  • Use a meat thermometer to check chicken doneness to avoid under or overcooking.
  • Serve with a fresh green salad or steamed vegetables for a complete meal.
