Description

This One Pan Dumplings recipe is a flavorful and easy-to-make dish featuring frozen dumplings baked alongside a spicy coconut Thai curry sauce with stir-fry vegetables. Perfect for a quick weeknight dinner, it combines creamy coconut milk, aromatic Thai red curry paste, and crunchy vegetables all cooked to perfection in the oven.

Ingredients

Sauce and Base

  • 400 g Coconut milk
  • 3 tbsp Red Thai curry paste
  • 2 tbsp Soy sauce
  • 2 tbsp Rice vinegar
  • 1 tbsp Grated ginger
  • 2 Garlic cloves, crushed

Vegetables and Dumplings

  • 300 g Stir fry vegetable bag
  • 12 Frozen dumplings
  • 3 Spring onions, sliced
  • Chilli crisp, to drizzle

Instructions

  1. Preheat Oven: Preheat your oven to 200℃ fan/220℃/Gas Mark 7/450°F to ensure it is hot and ready for baking the dumplings and sauce together.
  2. Prepare Sauce and Vegetables: In a baking dish, combine the coconut milk, red Thai curry paste, soy sauce, rice vinegar, grated ginger, and crushed garlic cloves. Stir well to create a flavorful curry sauce, then mix in the stir-fry vegetable bag to coat all vegetables evenly.
  3. Add Dumplings and Bake: Nestle the frozen dumplings into the curry and vegetable mixture in the dish. Place the dish in the preheated oven and bake for 20-25 minutes, or until the top of the dumplings are golden and crispy, and their insides are fully heated through.
  4. Garnish and Serve: Once baked, remove the dish from the oven and scatter sliced spring onions over the top. Drizzle with chilli crisp for a spicy kick. Serve immediately, either on its own or spooned over sticky rice for a complete meal.

Notes

  • For best flavor, use authentic Thai red curry paste found at most Asian grocery stores.
  • If you prefer fresher vegetables, substitute the stir-fry vegetable bag with your choice of sliced bell peppers, carrots, and snap peas.
  • The cooking time may vary depending on the size and brand of frozen dumplings; ensure they are cooked through before serving.
  • Chilli crisp adds a spicy and crunchy texture but can be omitted for a milder dish.
  • Serve with steamed sticky or jasmine rice to make the meal more filling.
