Description
Old-Fashioned Whoopie Pies are classic chocolate sandwich cookies filled with a creamy, fluffy vanilla filling. This nostalgic treat combines tender cocoa-flavored cake-like cookies with a rich, homemade creamy filling, perfect for sharing or enjoying as a delightful dessert.
Ingredients
Cookies:
- 1/2 cup baking cocoa
- 1/2 cup hot water
- 1/2 cup shortening
- 1-1/2 cups sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2-2/3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup buttermilk
Filling:
- 3 tablespoons all-purpose flour
- Dash salt
- 1 cup 2% milk
- 3/4 cup shortening
- 1-1/2 cups confectioners' sugar
- 2 teaspoons vanilla extract
Instructions
- Bloom the cocoa: Whisk together the hot water and baking cocoa in a bowl and set aside for five minutes to cool. This enhances the chocolate flavor using natural cocoa powder, which has the acidity needed for the recipe.
- Make the batter: In a large bowl, cream the shortening and sugar together for 5 to 7 minutes until light and fluffy to dissolve sugar and incorporate air. Add the eggs, vanilla extract, and cooled cocoa mixture, then beat until combined. In another bowl, whisk the flour, baking powder, baking soda, and salt. Add the dry ingredients alternately with the buttermilk to the wet mixture, beating after each addition until the batter is smooth and cake-like.
- Scoop and bake: Using a cookie scoop or spoon, drop 2 teaspoons of batter onto a greased or parchment-lined baking sheet, spacing them about 2 inches apart. Bake in a preheated oven at 350ºF (175ºC) for 10 to 12 minutes until the cookies feel firm. Remove and transfer to a wire rack to cool completely.
- Start the filling: Combine the flour and salt in a saucepan and gradually whisk in milk until smooth. Cook over medium-high heat, whisking continuously, until the mixture thickens, about 5 to 7 minutes. Cover and refrigerate the thickened mixture until completely cool. The filling can be prepared a day ahead and stored in the fridge.
- Finish the filling: In a bowl, cream the shortening, confectioners' sugar, and vanilla extract together for 3 to 4 minutes until light and fluffy. Add the chilled milk mixture to the creamed shortening and beat for 7 more minutes until extra fluffy and creamy.
- Assemble the whoopie pies: Using an offset spatula, spread filling on the flat side of one cookie and sandwich with another flat side facing down. Repeat until all cookies are filled, then serve or store chilled.
Notes
- Ensure eggs are at room temperature for better batter consistency and rise.
- Cooling the cookies completely before filling prevents melting the filling.
- The filling can be made a day in advance and stored refrigerated to enhance flavor.
- Use natural unsweetened cocoa powder for the best flavor and texture.
- Spacing cookies on the baking sheet is important to avoid them spreading into each other.
