Description

These Oat-Flour Mini Pancakes are a quick and toddler-friendly breakfast option that’s naturally sweetened with date paste. Made with wholesome oat flour and almond milk, these pancakes are fluffy, nutritious, and perfect for little hands. Ready in just 15 minutes, they make a wholesome start to any day.

Ingredients

Pancake Batter

  • 2 large eggs
  • 1 1/4 cups almond milk (or oat milk, regular milk)
  • 1 ½ cups oat flour
  • 4 tablespoons date paste
  • 1 teaspoon baking powder
  • ¼ teaspoon kosher salt

For Cooking

  • 2-3 tablespoons coconut oil (for cooking; alternatively butter or olive oil can be used)

Optional Toppings

  • Butter
  • Maple syrup
  • Jam
  • Honey
  • Blueberries
  • Raspberries
  • Pomegranate seeds
  • White chocolate nibbles

Instructions

  1. Whisk the eggs: Whisk 2 large eggs vigorously for about 1 minute until they become light and fluffy to incorporate air, which helps create a tender texture in the pancakes.
  2. Combine ingredients: Add 1 ¼ cups almond milk, 1 ½ cups oat flour, 4 tablespoons date paste, 1 teaspoon baking powder, and ¼ teaspoon kosher salt to the eggs and whisk together until the batter is smooth and well combined.
  3. Prepare the batter for piping: Transfer the pancake batter into a squeeze bottle or a piping bag fitted with a small opening to easily portion out small pancakes.
  4. Heat the pan and add oil: Place a nonstick pan over medium-low heat and brush it lightly with 2-3 tablespoons of coconut oil (or butter/olive oil) to prevent sticking and add flavor.
  5. Pipe and cook pancakes: Pipe small rounds of batter onto the heated pan. Cook for 1-2 minutes until bubbles form on the surface indicating the pancakes are ready to flip.
  6. Flip and finish cooking: Carefully flip each mini pancake and cook for an additional 10-15 seconds to fully cook through and lightly brown the other side.
  7. Serve and enjoy: Serve the mini pancakes warm with your choice of butter, maple syrup, jam, or honey, and top with fresh fruit or white chocolate nibbles for added sweetness and texture.

Notes

  • Using a squeeze bottle or piping bag allows for uniform and perfectly sized mini pancakes, ideal for toddlers.
  • Adjust sweetness by modifying the amount of date paste or toppings according to preference.
  • Oat flour can be substituted with whole wheat flour but may alter texture slightly.
  • Milk alternatives like oat or regular milk work fine if almond milk is unavailable.
  • Cook on medium-low heat to prevent burning and ensure pancakes cook thoroughly.
  • These pancakes freeze well; reheat in a toaster or pan for a quick breakfast.
