Quick to prepare and requiring no baking, they make a perfect healthy snack or dessert that’s both satisfying and easy to customize with optional flax or hemp seeds for added nutrition.
Ingredients
Base Ingredients
- 2 cups old-fashioned oats
- 1 cup roasted cashews
- 1 cup plump Medjool dates, split and pitted
- 3/4 cup creamy peanut butter, warmed
- 2 teaspoons vanilla extract
- 1/4 cup ground flax and/or shelled hemp seeds (optional)
Topping
- 20 ounces semi-sweet or dark chocolate, melted
- Flaky sea salt (optional)
Instructions
- Prepare the Pan: Line a 9×9 inch square pan with parchment paper to prevent sticking and make for easy removal of the bars.
- Make the Dough: In a food processor or blender, combine the oats, roasted cashews, Medjool dates, warmed peanut butter, vanilla extract, and flax or hemp seeds if using. Blend until the mixture forms a sticky dough.
- Press Dough into Pan: Transfer the dough into the prepared pan and press it down evenly to form a compact base layer.
- Initial Chilling: Place the pan in the freezer for about 10 minutes to help the dough firm up slightly before adding the chocolate layer.
- Add Chocolate Topping: Pour the melted dark chocolate evenly over the chilled dough base. Optionally, sprinkle with flaky sea salt for enhanced flavor contrast.
- Final Chilling: Refrigerate the assembled bars for at least 1 to 2 hours, or until the chocolate topping is set and the bars are firm enough to cut.
- Cut and Serve: Once fully chilled, cut the block into 16 bars. Enjoy immediately or store in the fridge for a convenient, no-bake snack.
Notes
- Warming the peanut butter slightly makes it easier to blend with the other ingredients.
- If you prefer a nut-free version, substitute cashews with pumpkin seeds and use sunflower seed butter instead of peanut butter.
- The flax or hemp seeds are optional but add a boost of fiber and omega-3 fatty acids.
- For a sweeter bar, you can use milk chocolate instead of dark chocolate, but note that dark chocolate provides a richer flavor and less sugar.
- Store bars in an airtight container in the fridge for up to one week, or freeze for longer storage.
