Description

This Mexican Street Corn Dip is a creamy, cheesy, and flavorful appetizer inspired by the classic elote. Made with roasted corn, mayonnaise, sour cream, cheddar, and cotija cheese, seasoned with Tajin, and optionally broiled for a golden top, it’s perfect for sharing at parties or game day gatherings.

Ingredients

Main Ingredients

  • 6 ears roasted corn
  • 1/4 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cotija cheese
  • 2-3 teaspoons Tajin seasoning (preferably 2 teaspoons in the dip, plus extra for topping)
  • Fresh cilantro (for garnish)
  • Crackers or tortillas (for serving)

Instructions

  1. Prepare the Corn: Cut the kernels off the roasted ears of corn, being careful to remove all the kernels into a medium saucepan or skillet for cooking.
  2. Combine and Heat: Add the mayonnaise, sour cream, shredded cheddar cheese, cotija cheese, and Tajin seasoning to the pan with the corn. Heat over medium-low heat, stirring frequently, until the mixture is thoroughly heated and the cheeses are melted and combined, creating a creamy dip.
  3. Broil for a Golden Top (Optional): For an extra touch, transfer the warm corn dip into a cast iron skillet or an oven-safe baking dish. Top with additional cotija and cheddar cheese and place under a broiler on high for 3-4 minutes until the top is lightly browned and bubbly. Watch carefully to prevent burning.
  4. Garnish and Serve: Remove the dip from the heat or oven, sprinkle fresh chopped cilantro over the top for a burst of freshness, and serve immediately with crackers or tortillas for dipping.

Notes

  • For best flavor, use roasted corn instead of canned or frozen.
  • Tajin seasoning adds a nice tangy and spicy kick; adjust the amount to your preference.
  • The broiling step is optional but recommended for a more textured and visually appealing dip.
  • This dip can be kept warm in a low oven or served at room temperature but is best enjoyed fresh.
  • Pairs well with tortilla chips, sliced veggies, or toasted baguette slices as alternatives to crackers or tortillas.
