Description

This comforting Mashed Potato Bowl recipe layers creamy mashed potatoes with sweet corn, melted cheddar and mozzarella cheeses, crispy chicken nuggets, and a drizzle of rich brown gravy. Broiled just until bubbly and golden, it makes an easy, satisfying meal perfect for family dinners.

Ingredients

Base Ingredients

  • 4 cups (840 g) prepared mashed potatoes, warmed
  • 1 can (15.25 ounces) corn kernels, drained and warmed
  • ½ cup (56.5 g) mild cheddar cheese, shredded
  • ½ cup (56.5 g) mozzarella cheese, shredded

Protein

  • 1 bag (32 ounces) chicken nuggets, cooked according to package instructions

Sauce & Garnish

  • 1 cup (233 g) brown gravy, warmed
  • parsley, chopped for garnish

Instructions

  1. Prepare and heat ingredients: Warm the prepared mashed potatoes and corn kernels separately. Cook the chicken nuggets according to the package instructions until crispy and hot.
  2. Preheat oven to broil: Set your oven to broil and place four large oven-safe bowls or crocks on a rimmed baking sheet to get ready for assembly.
  3. Assemble the bowls: Spoon 1 cup of warmed mashed potatoes into each bowl. Top each with ½ cup of warmed corn kernels, followed by 2 tablespoons of shredded cheddar and 2 tablespoons of shredded mozzarella cheese.
  4. Add chicken nuggets: Place a portion of the cooked chicken nuggets on top of the cheese layer in each bowl.
  5. Broil: Transfer the baking sheet with the assembled bowls to the oven’s broiler compartment. Broil for 2-3 minutes, or until the cheese is melted, bubbly, and slightly golden, and the chicken nuggets become crispier.
  6. Drizzle gravy: Carefully remove the baking sheet from the broiler. Evenly drizzle the warm brown gravy over the tops of the bowls, covering the chicken and cheese layers.
  7. Garnish and serve: Sprinkle chopped parsley over each bowl for a fresh, vibrant finish. Serve the mashed potato bowls warm and enjoy an inviting, hearty meal.

Notes

  • You can substitute brown gravy with mushroom or turkey gravy for different flavor profiles.
  • Use leftover mashed potatoes and chicken nuggets to save time and reduce waste.
  • For a spicier kick, add a dash of smoked paprika or chili flakes before broiling.
  • If oven-safe bowls aren’t available, use ramekins or small cast-iron skillets that tolerate broiling.
  • This recipe can be doubled easily for larger gatherings; just adjust baking sheets and broil times accordingly.
