Description

Maroulosalata is a refreshing traditional Greek lettuce salad featuring crisp romaine lettuce, fresh herbs like dill and mint, creamy feta cheese, and a tangy lemon-oregano dressing made with extra virgin olive oil. This vibrant salad is quick to prepare and perfect as a light appetizer or side dish for Mediterranean meals.

Ingredients

Salad Ingredients

  • 2 hearts of romaine lettuce
  • 4 green onions (white and green parts)
  • 1/2 bunch dill
  • 1/2 bunch mint
  • 1/2 cup crumbled feta cheese

Dressing Ingredients

  • Juice of 1 large lemon
  • Kosher salt, to taste (about a large pinch)
  • 1/2 teaspoon dried oregano
  • 1/3 cup extra virgin olive oil

Instructions

  1. Crisp the romaine: Prepare a large mixing bowl with ice water. Thinly slice the romaine lettuce, then submerge it in the ice water for 5 minutes to crisp the leaves while you prepare the rest of the ingredients and dressing.
  2. Prep the herbs: Trim and finely chop the green onions, including both white and green parts. Finely chop the dill and mint leaves, discarding the stems.
  3. Make the dressing: In a medium mixing bowl, combine the lemon juice, a large pinch of kosher salt, and dried oregano. Whisk these together, then slowly drizzle in the extra virgin olive oil while continuing to whisk until the dressing is fully emulsified. Set aside.
  4. Drain and assemble the salad: Drain the romaine lettuce from the ice water and dry it thoroughly using a salad spinner or paper towels to remove excess moisture. Transfer the lettuce to a large serving bowl and add the chopped green onions, dill, mint, and crumbled feta cheese. Toss everything gently to combine.
  5. Serve: Just before serving, whisk the dressing one more time and pour it over the salad. Mix well, using hands if desired, to ensure every leaf is coated with the dressing. Serve immediately for best freshness and flavor.

Notes

  • Soaking the lettuce in ice water helps it become extra crisp and refreshing.
  • Use fresh herbs for the most vibrant flavor; dried herbs will alter the salad's authentic taste.
  • This salad is best served immediately but can be refrigerated for up to 2 hours; dry the greens thoroughly before storing.
  • Adjust salt and lemon juice to taste based on your preference.
  • Can be served as a light appetizer or as a side to grilled meats and seafood.
