Description

A refreshing and vibrant mango salad featuring a zesty lime-honey dressing with a hint of chili heat, perfect for a light and flavorful side dish or snack. This easy-to-make salad combines fresh mangoes, red pepper, jalapenos, and red onion, tossed in a cilantro-infused dressing and chilled to let the flavors meld beautifully.

Ingredients

Dressing

  • 2 tablespoons chopped cilantro
  • 1 large lime, juiced (about 1 tablespoon)
  • 2 tablespoons honey
  • 1 teaspoon chili powder

Salad

  • 2 cups diced mango
  • 1 red pepper, diced
  • 2 jalapenos, seeded and diced
  • ½ large red onion, sliced

Instructions

  1. Make the dressing: In a medium bowl, combine the chopped cilantro, fresh lime juice, honey, and chili powder. Stir well to blend all the flavors together and set aside.
  2. Mix the ingredients: In a large bowl, combine the diced mango, diced red pepper, seeded and diced jalapenos, and sliced red onion. Toss them gently to mix.
  3. Add the dressing: Pour the prepared honey-cilantro dressing over the salad mixture. Fold it in carefully until the dressing is evenly incorporated and coats all the ingredients.
  4. Chill: Cover the salad and place it in the refrigerator for at least one hour. This chilling step allows the flavors to meld and intensify. Before serving, toss or stir the salad once more to refresh the mix.

Notes

  • For less spice, reduce the amount of jalapenos or remove the seeds completely.
  • You can substitute honey with agave nectar or maple syrup for a vegan option.
  • This salad is best served chilled and makes a great side for grilled meats or a light summer meal.
  • Use ripe but firm mangoes to maintain texture in the salad.
  • Adjust chili powder according to your heat preference.
