Description
This Magic Self Saucing Lemon Pudding is a delightful dessert featuring a light lemon-flavored cake with a tangy lemon sauce that forms during baking. The contrast between the fluffy cake and the bubbling lemon sauce, served warm with a dusting of icing sugar and optional vanilla ice cream, makes it an irresistible treat perfect for any occasion.
Ingredients
Dry Ingredients
- 1 cup self-raising flour
- ½ cup sugar
- 1 lemon (zest only, juice reserved for sauce)
Wet Ingredients
- ½ cup milk (warmed)
- 2 tablespoons butter (melted and mixed in with the warm milk)
Sauce Ingredients
- ¼ cup sugar
- 1 cup boiling water
- ½ cup lemon juice (from 2 to 3 lemons)
To Serve
- Icing / confectioners’ sugar for sprinkling
- Vanilla ice cream, whipped cream, or custard (optional)
Instructions
- Preheat and Prepare Dish: Preheat your oven to 355°F (180°C) for a fan oven, or 390°F (200°C) for a conventional oven, and grease a medium-sized, high-sided baking dish with butter to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, combine 1 cup self-raising flour, ½ cup sugar, and the zest of 1 lemon, ensuring the lemon zest is evenly distributed.
- Combine Wet Ingredients: Warm ½ cup milk and melt 2 tablespoons of butter. Mix the melted butter into the warm milk.
- Make Batter: Pour the milk and butter mixture into the bowl with the dry ingredients and stir gently until the batter is well combined and smooth.
- Pour Batter into Dish: Transfer the batter evenly into the prepared baking dish, smoothing the surface slightly.
- Prepare Sauce: In a separate bowl, mix ¼ cup sugar, 1 cup boiling water, and ½ cup lemon juice until the sugar dissolves to form the lemon sauce.
- Add Sauce and Bake: Carefully pour the lemon sauce over the batter in the baking dish. Place the dish in the preheated oven and bake for approximately 35 minutes, or until the top is golden brown and the sauce is bubbling around the edges.
- Rest the Pudding: Remove the pudding from the oven and let it sit for 10 to 15 minutes to allow the sauce to thicken slightly before serving.
- Serve: Sprinkle the pudding with icing sugar and serve immediately with vanilla ice cream, whipped cream, or custard if desired.
Notes
- Ensure the boiling water used for the sauce is hot to help create the self-saucing effect during baking.
- Use fresh lemon juice for the best citrus flavor in the sauce.
- If you don’t have self-raising flour, you can substitute plain flour with added baking powder (1 cup plain flour plus 1 ½ teaspoons baking powder).
- Letting the pudding rest after baking is important to allow the sauce to thicken and set properly.
- This dessert is best served warm for optimal flavor and texture.
