This hearty and flavorful rice dish is perfectly complemented by a golden, crispy tahdig layer, making it a delightful centerpiece for any meal.
Ingredients
Rice & Saffron
- 3 cups basmati rice
- 1/8 teaspoon saffron threads, ground
- 1 3/4 cups water, divided, plus extra for cooking rice
Meat and Vegetables
- 2 tablespoons extra virgin olive oil
- 1 large onion, finely diced
- 2 garlic cloves, grated or minced
- 1 pound ground beef (or lamb)
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1 tablespoon tomato paste
- 1 pound green beans, trimmed and cut into 1/2-inch pieces
- 1 medium cinnamon stick
- 4 teaspoons kosher salt, divided
- 1/2 teaspoon freshly ground black pepper
- 1/2 lemon, juiced
Tahdig Layer
- 3 tablespoons neutral oil
- 1 1/2 cups cooked rice (reserved from the prep step mixing with saffron water)
Instructions
- Prep the rice: Wash the basmati rice under cold water repeatedly until the water runs clear to remove surface starch. Soak the rice in a bowl of cold water for at least 30 minutes to ensure fluffy, separate grains.
- Bloom the saffron: While the rice soaks, stir the ground saffron into 1/4 cup of water to release its color and aroma.
- Make the meat sauce: Heat olive oil in a large skillet over medium-high heat. Add the finely diced onion and sauté until golden, about 5 minutes. Stir in the garlic, then add the ground beef, breaking it up as it cooks until browned.
- Add beans and season: Mix in the ground turmeric and cinnamon, then stir in the tomato paste. Add the trimmed green beans, cinnamon stick, and 1 1/2 cups water. Season with 1 teaspoon kosher salt, black pepper, lemon juice, and half of the bloomed saffron water.
- Simmer the sauce: Reduce heat to low and simmer, stirring regularly until the water evaporates and a thick meat mixture remains, about 20 minutes. Turn off heat and taste to adjust seasoning if needed.
- Parboil the rice: In a large non-stick pot, bring 8 cups water and 3 teaspoons kosher salt to a boil. Drain the soaked rice and add to boiling water. Cook until grains are slightly softened but still al dente, about 5 to 7 minutes. Drain and set aside. Rinse the pot used for boiling.
- Prepare the tahdig layer: Mix 1 1/2 cups of the cooked rice with the remaining saffron water until the rice turns golden. Pour neutral oil into the rinsed pot (do not heat yet), then evenly spread the saffron-infused rice across the bottom using the back of a spoon.
- Layer Loobia Polo: Alternate layers of plain cooked rice and the meat and green bean mixture, building into a pyramid shape away from the pot sides. Using the back of a spoon, make 5 holes down to the bottom of the pot to allow steam circulation.
- Steam the rice: Cover the pot with a lid and place on high heat. Once steam starts to rise, reduce heat to low. Optionally, wrap a tea towel around the lid to absorb condensation. Cook covered on low heat for 1 hour, carefully watching to avoid burning the tahdig. A glass lid helps to monitor steam.
- Serve the rice: Remove the lid, gently fluff the rice to mix. Spoon into a serving dish, removing the cinnamon stick. Use a spatula to carefully lift out the crispy tahdig layer; serve in one piece or broken around the edge of the rice.
Notes
- Soaking and rinsing the rice thoroughly is crucial for achieving fluffy, separate grains.
- Blooming the saffron enhances its flavor and color in the dish.
- Be sure to make holes in the rice before steaming to allow even steam circulation for perfect texture.
- Wrapping a tea towel around the lid helps prevent water from dripping back onto the rice, preserving the crispy tahdig.
- You can substitute lamb for beef based on preference.
- Cooking low and slow during the steaming step is key to develop the signature crispy tahdig crust.
