Description

This Longhorn Steakhouse-inspired Crispy Brussels Sprouts recipe delivers perfectly roasted Brussels sprouts tossed in a smoky, sweet, and spicy butter sauce. Blanched briefly to soften, then oven-roasted until golden and crispy, these sprouts are bursting with flavor from a blend of chili powder, smoked paprika, chipotle, and a touch of honey and maple syrup for sweetness. Perfect as a flavorful side dish or appetizer.

Ingredients

Brussels Sprouts

  • 1 lb fresh Brussels sprouts (trimmed of stems)
  • 1 tbsp coarse sea salt
  • 1-2 tbsp olive oil
  • Cooking spray (for pan)

Spice Butter Sauce

  • 2 tbsp butter (melted)
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp chipotle chili powder
  • 1/2 tsp coarse sea salt
  • 1/2 tsp red pepper flakes
  • 1 tsp maple syrup
  • 1 tbsp honey

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the Brussels sprouts.
  2. Blanch Brussels Sprouts: Bring a large saucepan of water to a boil. Add Brussels sprouts to the boiling water, then reduce heat to a simmer and cook for 4 minutes to slightly soften them.
  3. Drain Sprouts: Using a strainer, drain the Brussels sprouts completely to remove all water.
  4. Ice Bath: Quickly place the drained Brussels sprouts into an ice bath for 30 seconds. This stops the cooking process and helps retain their bright green color.
  5. Dry Sprouts: Remove the sprouts from the ice bath and place them on a cutting board. Lightly pat dry with paper towels to remove excess moisture for better roasting.
  6. Prepare for Roasting: Slice each Brussels sprout in half lengthwise. Place them cut side down on a rimmed baking tray that has been sprayed with cooking spray. Keep any loose leaves as they will crisp up nicely. Optionally, line the tray with foil or parchment paper for easier cleanup.
  7. Oil the Sprouts: Lightly drizzle or brush the sprouts with 1-2 tablespoons of olive oil to help them crisp and brown in the oven.
  8. Roast Sprouts: Roast the Brussels sprouts in the preheated oven for 25 minutes or until they are golden brown and crispy on the edges.
  9. Melt Butter: While the sprouts roast, melt 2 tablespoons of butter for the sauce.
  10. Make Spice Butter Sauce: In a small bowl, combine the melted butter with chili powder, smoked paprika, chipotle chili powder, sea salt, red pepper flakes, honey, and maple syrup. Whisk everything together until well blended.
  11. Toss Sprouts with Sauce: Remove the roasted Brussels sprouts from the oven and transfer them to a large bowl. Drizzle the prepared spice butter sauce over the sprouts and toss gently to coat evenly.

Notes

  • Blanching the Brussels sprouts before roasting helps achieve a tender interior with a crispy exterior.
  • Keeping the loose leaves that fall off the sprouts while slicing adds extra crispiness when roasted.
  • Slicing the sprouts in half allows maximum surface area for browning and flavor absorption.
  • Adjust the amount of red pepper flakes to control the heat level to your preference.
  • This recipe pairs well with steak, grilled meats, or as a flavorful vegetarian side dish.
