Description

These loaded beef and bean nachos are the perfect crowd-pleaser with layers of seasoned ground beef, refried beans, melted cheddar and Monterey Jack cheese, and topped with fresh tomatoes, avocado, and jalapeños. Baked to melty perfection, they make an ideal appetizer or casual meal for gatherings.

Ingredients

Beef Mixture

  • 1 tbsp. extra-virgin olive oil
  • 1 large yellow onion, chopped
  • 1 lb. ground beef
  • 2 cloves garlic, finely chopped
  • 1 tbsp. taco seasoning
  • Kosher salt, to taste
  • 1 (15-oz.) can refried beans
  • 1/4 cup water

Nacho Layers

  • 1 large bag tortilla chips, divided
  • 2 cups shredded cheddar cheese, divided
  • 2 cups shredded Monterey Jack cheese, divided
  • 1 (15-oz.) can black beans, drained, divided
  • 1/2 cup pickled jalapeños, divided

Toppings

  • 1 large tomato, finely chopped
  • 1 avocado, finely chopped
  • 1/4 cup fresh cilantro leaves (optional)
  • 1/4 cup thinly sliced scallions
  • Sour cream and hot sauce, for drizzling

Instructions

  1. Preheat Oven. Preheat your oven to 425ºF to prepare for baking the nachos.
  2. Cook Onions and Beef. In a large skillet over medium heat, heat olive oil. Add the chopped onion and cook, stirring occasionally, until softened, about 7 minutes. Add the ground beef and cook, stirring with a wooden spoon, until no longer pink, approximately 6 minutes. Drain excess fat.
  3. Add Seasoning and Beans. Stir in finely chopped garlic and taco seasoning to the beef mixture. Season with kosher salt as needed. Cook until the beef is well browned and slightly crispy, about 5 minutes. Then add the refried beans and water, stirring to combine thoroughly.
  4. Assemble Nacho Layers. On a foil-lined baking sheet, spread half of the tortilla chips evenly. Top with half of the beef and bean mixture, half of both shredded cheddar and Monterey Jack cheese, half of the drained black beans, and half of the pickled jalapeños. Repeat the layering with the remaining ingredients.
  5. Bake Nachos. Bake in the preheated oven until the cheese melts and is bubbly, approximately 15 minutes.
  6. Add Fresh Toppings. Remove from the oven and immediately top with finely chopped tomatoes, avocado, fresh cilantro leaves (if using), and thinly sliced scallions.
  7. Serve. Drizzle the nachos with sour cream and hot sauce to taste. Serve immediately for the best texture and flavor.

Notes

  • Use a foil-lined baking sheet for easy cleanup.
  • If you like extra spice, add more jalapeños or hot sauce.
  • To make it vegetarian, omit the beef and add extra beans or a meat substitute.
  • Ensure to drain black beans well to avoid soggy nachos.
