Description
A fresh and zesty Lemony Parmesan Kale Salad featuring tender massaged kale, crunchy croutons, and a bright lemon-garlic dressing, perfect as a quick and nutritious side dish or light meal.
Ingredients
Salad
- 2 Bunches Curly Kale, stems removed and leaves washed
- 1 Cup Croutons, finely chopped or crushed
- 1/2 Cup Freshly Grated Parmesan Cheese
Dressing
- 1/4 Cup Olive Oil
- 1/4 Cup Lemon Juice
- 3 Cloves Garlic, minced or crushed
- 1 Teaspoon Sea Salt
- 1/2 Teaspoon Black Pepper
Instructions
- Prepare the kale: Remove and discard the kale stems, then thoroughly wash the kale leaves under running water and place them in a large bowl.
- Massage the kale: Sprinkle about 1 teaspoon of sea salt over the kale and use your hands to massage the salt into the leaves, continuing for 1-2 minutes until the kale softens and darkens in color.
- Add the croutons: Finely chop or crush the croutons and add them to the bowl with the kale, ensuring even distribution.
- Make the dressing: In a small bowl, combine the olive oil, lemon juice, minced garlic, black pepper, and the remaining sea salt. Whisk until thoroughly combined to create a bright and flavorful dressing.
- Toss the salad: Pour the dressing over the kale and croutons, add the freshly grated Parmesan cheese, and toss everything together until the salad is evenly coated with dressing and cheese.
- Serve or store: Serve the salad immediately to enjoy its fresh flavors, or place it in an airtight container and refrigerate for up to 2-3 days.
Notes
- Massaging the kale softens its tough texture and makes it more palatable.
- Use fresh lemon juice for the best bright flavor in the dressing.
- Adding Parmesan cheese provides a savory nutrient boost and enhances taste.
- Can be served as a side salad or a light main course by adding protein like grilled chicken or chickpeas.
- For a vegan version, omit the Parmesan cheese or substitute with a vegan alternative.
