Ingredients
Sushi Rice
- 2 cups (400 g) sushi rice
- 2 1/2 cups (600 ml) water
- 1/4 cup (60 ml) rice vinegar
- 2 tablespoons (25 g) granulated sugar
- 1 teaspoon (5 g) salt
Fillings & Toppings
- 300 g fresh sushi-grade salmon, thinly sliced
- 200 g imitation crab meat, finely chopped
- 3 tablespoons (45 g) mayonnaise
- 2 medium ripe avocados, thinly sliced
- 3 tablespoons (45 g) fish roe
- Soy sauce, for serving
Instructions
- Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear to remove excess starch. Cook the rice with 2 1/2 cups water according to package instructions, either using a rice cooker or stovetop method.
- Season the Rice: In a small bowl, mix the rice vinegar, granulated sugar, and salt until completely dissolved. Gently fold this seasoning mixture into the warm cooked rice, being careful not to mash the grains. Let the rice cool slightly to room temperature.
- Prepare the Mold: Line an 8-inch springform pan with plastic wrap, ensuring the base and sides are well covered to aid in easy removal later on.
- First Rice Layer: Press half of the seasoned sushi rice evenly into the bottom of the lined springform pan, creating a flat and compact layer.
- Avocado Layer: Arrange thin slices of ripe avocado evenly over the rice layer.
- Crab Mixture: Combine the finely chopped imitation crab meat with mayonnaise in a bowl until well mixed. Spread this crab mixture evenly over the avocado layer.
- Second Rice Layer: Gently press the remaining seasoned rice over the crab mixture to cover it evenly, making sure the layers are compacted but not crushed.
- Salmon Topping: Neatly arrange the thinly sliced fresh sushi-grade salmon over the top rice layer in an appealing pattern.
- Add Fish Roe: Sprinkle the fish roe evenly over the salmon for a burst of color and flavor.
- Chill and Set: Refrigerate the assembled sushi cake for at least 30 minutes to firm up and allow the layers to meld.
- Serve: Carefully remove the sushi cake from the springform pan using the plastic wrap to lift it out. Slice with a sharp knife wiped clean between cuts for neat slices, and serve with soy sauce on the side.
Notes
- Chill the sushi cake thoroughly before slicing to maintain clean, defined layers.
- Use a very sharp knife and wipe the blade clean between cuts to prevent sticking and tearing.
- Slice the avocados just before assembling to prevent them from browning and losing their fresh appearance.
- Best enjoyed within 24 hours for optimal freshness and texture.
