Description

Korean Strawberry Milk is a delightful and refreshing beverage featuring sweet and tangy strawberry syrup combined with creamy non-dairy milk. This easy-to-make drink uses fresh strawberries enhanced by a squeeze of lemon juice, creating a perfectly balanced flavor that can be enjoyed chilled with ice. Perfect for a quick, fruity treat or a unique homemade refreshment.

Ingredients

Strawberries

  • 1 pound fresh strawberries, finely diced (2 ¾ cups total, divided into 2 cups and ¾ cup)

Syrup and Maceration

  • ¼ cup cane or brown sugar (divided: 3 tbsp for syrup, 1 tbsp for maceration, ¼ tbsp extra if needed)
  • Squeeze of lemon juice (large squeeze for syrup, optional small squeeze for maceration)

Milk

  • 2-3 cups unsweetened non-dairy milk (soy milk recommended)

Extras

  • Ice cubes as needed

Instructions

  1. Prepare macerated strawberries: Take ¾ cup of the diced strawberries and add 1 tablespoon of sugar. Stir well to coat the strawberries and let them sit aside to macerate, which will draw out their juices and soften them slightly.
  2. Make strawberry syrup: In a pan, place the remaining 2 cups of diced strawberries with 3 tablespoons of sugar and a large squeeze of lemon or lime juice. Bring the mixture to a boil, then reduce heat just above simmer. Cook for approximately 10 minutes, stirring frequently, until the strawberries break down and the mixture becomes syrupy.
  3. Cool the syrup: Remove the syrup from heat and transfer it to the refrigerator to cool until completely cold. This chilling step intensifies the flavors and ensures the drink is refreshing.
  4. Assemble the drink: In a glass, pour 2-3 tablespoons of the chilled strawberry syrup. Add ¾ cup of your preferred unsweetened non-dairy milk (soy milk works well). Add ice cubes to your liking, and then top with about 1 tablespoon of the macerated strawberries. Stir gently to combine all flavors.
  5. Adjust and serve: Taste your Korean Strawberry Milk and feel free to add more syrup or macerated strawberries if desired for sweetness or texture. Enjoy immediately. Store any remaining syrup and macerated strawberries in the refrigerator for up to 3 days.

Notes

  • Using fresh ripe strawberries provides the best flavor, but you can use frozen if fresh are unavailable; thaw before use.
  • Adjust sugar quantity depending on strawberry sweetness and your taste preference.
  • Non-dairy milk can be substituted with any milk of your choice if not vegan.
  • Keep the syrup refrigerated and use within 3 days for best taste.
  • Serve over ice for a cold, refreshing drink especially during warmer months.
