Ingredients
Crust
- 2 cups Shredded Mozzarella Cheese
- 3 ounces Cream Cheese
- 1 1/4 cups Almond Flour
- 1 large Egg
- 1/4 tsp Xanthan Gum
- 1/2 tsp Baking Powder
- 1/2 tsp Garlic Powder
- 1/4 tsp Italian Seasoning
Toppings
- 1/2 cup Low-Carb Marinara Sauce
- 15 slices Pepperoni
- 4 ounces Sausage Pieces
- 1/4 Red Onion, sliced thinly
- 1/2 Green Bell Pepper, sliced thinly
- 1 1/2 cups Mozzarella Cheese, shredded
- 1/4 cup Parmesan Cheese, grated
- 1/4 tsp Italian Seasoning
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking.
- Melt Cheese for Crust: Place the cream cheese and 2 cups of shredded mozzarella in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until completely melted and combined into a smooth mixture.
- Make Dough: Transfer the melted cheese mixture into a mixing bowl and add the almond flour, egg, xanthan gum, baking powder, garlic powder, and Italian seasoning. Stir thoroughly until you form a consistent dough.
- Shape the Crust: Lightly wet your hands with water to prevent sticking, then press the dough into a rectangular shape on the prepared baking sheet, shaping it to your preferred thickness for the crust.
- Initial Bake: Bake the crust in the preheated oven for 10 minutes to set and slightly brown the base.
- Add Sauce: Remove the partially baked crust and evenly spread the low-carb marinara sauce over the surface.
- Layer Cheese: Sprinkle 1 1/2 cups of shredded mozzarella evenly over the sauce.
- Add Meat Toppings: Distribute the pepperoni slices and sausage pieces evenly across the cheese layer.
- Add Vegetables: Arrange the thinly sliced red onions and green bell peppers over the meats.
- Season and Add Parmesan: Sprinkle the pizza with Italian seasoning and grated Parmesan cheese for added flavor.
- Final Bake: Return the pizza to the oven and bake for an additional 15 minutes until the cheese is melted and bubbly and toppings are cooked through.
- Slice and Serve: Remove from the oven, allow to cool slightly, then slice into pieces and serve warm.
Notes
- For a crispier crust, bake an extra 2-3 minutes during the initial bake.
- You can substitute almond flour with coconut flour, but reduce the quantity and adjust moisture accordingly.
- If you want a spicier pizza, add crushed red pepper flakes to the topping before the final bake.
- Make sure to use full-fat cream cheese and mozzarella for best keto-friendly results.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best texture.
