Description

These Keto Cheesecake Fat Bombs are a delicious low-carb treat combining creamy cream cheese, rich butter, and smooth keto-friendly caramel sauce. Perfect for satisfying sweet cravings while staying on track with a keto lifestyle. Frozen for a refreshing, indulgent snack, they can be enjoyed straight from the freezer or softened slightly for a creamy texture.

Ingredients

Main Ingredients

  • 2/3 cup cream cheese (or mascarpone, 150g)
  • 3 tbsp unsalted butter, room temperature (43g)
  • 4 tbsp keto caramel sauce

Instructions

  1. Combine Cream Cheese and Butter: Add the cream cheese and room temperature butter to a mixing bowl. Using an electric mixer, whisk the two together until fully combined and smooth, ensuring there are no lumps.
  2. Incorporate Caramel Sauce: Add 3 heaped tablespoons of the cooled keto caramel sauce to the cream cheese and butter mixture. Whisk again until the caramel is evenly distributed throughout the batter.
  3. Fill Moulds: Spoon about 1 tablespoon of the cheesecake mixture into each cavity of silicone moulds or an ice cube tray. Drizzle a little caramel (about 1 heaped tablespoon total divided across the 6 cups) into the center of each portion. Then top each with the remaining cheesecake mixture, smoothing the tops with the back of a teaspoon for a clean finish.
  4. Freeze Until Set: Place the filled moulds in the freezer for 2 to 4 hours, allowing the fat bombs to firm up thoroughly.
  5. Serve and Enjoy: Remove from the freezer and enjoy immediately for a firm texture, or let sit for 5 minutes to soften slightly for a creamier mouthfeel.

Notes

  • Allow caramel sauce to cool before mixing to prevent melting the cream cheese mixture.
  • You can use mascarpone instead of cream cheese for a slightly different flavor and texture.
  • Store fat bombs in the freezer in an airtight container for up to 2 weeks.
  • Feel free to substitute silicone moulds with an ice cube tray for easy portioning.
