Description

This vibrant Chicken Taco Marinade recipe features tender, juicy boneless chicken thighs marinated in a tangy blend of lime, garlic, and warm spices. Perfectly grilled to achieve a smoky char, this flavorful chicken is ideal for tacos, served with your favorite toppings for a fresh and zesty meal.

Ingredients

Chicken

  • 1.25 up to 1.5 pounds boneless, skinless chicken thighs (or chicken breasts)

Marinade

  • 1/4 cup olive oil
  • Zest of 1 teaspoon lime (from 2 to 3 limes)
  • 2 tablespoons lime juice (freshly squeezed, from 2 to 3 limes)
  • 2 teaspoons minced garlic
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 and 1/4 teaspoons ground chili powder
  • 1/2 teaspoon dried oregano
  • 1 and 1/2 teaspoons salt
  • 1 teaspoon black pepper

Instructions

  1. Prepare Chicken: Trim any excess fat from the chicken thighs. If using chicken breasts, slice them in half widthwise and pound to an even thickness to ensure uniform cooking. Add the chicken pieces to a large resealable plastic bag.
  2. Make Marinade: In a bowl, whisk together olive oil, lime zest, lime juice, minced garlic, ground cumin, paprika, onion powder, chili powder, dried oregano, salt, and black pepper. Reserve 2 tablespoons of the marinade in a separate container for basting later.
  3. Coat Chicken: Pour the remaining marinade into the resealable bag with the chicken. Seal the bag tightly and knead gently to coat all pieces evenly. Refrigerate for at least 30 minutes and up to 4 hours, but not longer than 5 hours, as the citrus can start to dry out the chicken.
  4. Prep Grill: Preheat your grill to medium-high heat, about 450°F. Once heated, oil the grill grates thoroughly using tongs and a paper towel soaked in vegetable oil to prevent sticking.
  5. Grill Chicken: Remove the chicken from the marinade, allowing any excess to drip off. Place the chicken on the grill and cook for 4 to 6 minutes per side, flipping only once with a metal spatula. Aim for an internal temperature of 160°F with a nicely charred exterior. If the chicken sticks, wait an extra minute before flipping.
  6. Baste Chicken: While the chicken cooks, quickly brush the reserved marinade on the pieces, both before and after flipping. Keep the grill lid closed as much as possible to maintain heat.
  7. Rest and Slice: Transfer the grilled chicken to a plate and cover loosely with foil. Let it rest for 5 to 10 minutes to allow juices to redistribute. Slice thinly or chop as desired. Taste and adjust seasoning with additional salt or a squeeze of lime juice if preferred.

Notes

  • This marinade is excellent for tacos but also works well with rice bowls, salads, or as a main dish served with tortillas and your favorite toppings.
  • If you do not have access to a grill, the chicken can be cooked on the stovetop in a lightly oiled skillet over medium-high heat, about 5-7 minutes per side, until cooked through and nicely browned.
  • To ensure even cooking when using chicken breasts, pounding them to an even thickness is important to avoid dryness and uneven doneness.
  • Do not marinate chicken for longer than 5 hours as the citrus can start to break down the meat too much, resulting in a dry texture.
