Description

Delight in these rich and fluffy IHOP-style chocolate chip pancakes, perfectly balanced with cocoa powder and sweet chocolate chips. Made with buttermilk and a touch of melted butter, these pancakes offer a classic breakfast treat that's easy to prepare on the stovetop. Serve warm with your favorite toppings for a comforting and indulgent start to your day.

Ingredients

Dry Ingredients

  • 1 1/4 cups (160 g / 5.6 oz) all-purpose flour, spooned and leveled
  • 1/2 cup (50 g / 1.8 oz) cocoa powder
  • 1/3 cup (65 g / 2.3 oz) granulated sugar
  • 2 tsp baking powder

Wet Ingredients

  • 1 1/4 cups (300 ml / 10 fl oz) buttermilk
  • 1/4 cup (60 g / 2 oz) salted butter, melted (or unsalted butter + 1/4 tsp salt), plus more for frying
  • 2 large eggs

Add-ins

  • 1/2 cup (85 g / 3 oz) chocolate chips

Instructions

  1. Mix dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, granulated sugar, and baking powder until fully combined and evenly mixed.
  2. Combine wet ingredients: Pour the buttermilk, eggs, and melted butter into the bowl with the dry ingredients. Whisk thoroughly until the batter is smooth and homogenous.
  3. Fold in chocolate chips: Gently stir the chocolate chips into the batter, ensuring they are evenly distributed throughout.
  4. Heat pan: Place a non-stick pan, skillet, or griddle over medium heat and add a small dab of butter. Allow the butter to melt and coat the cooking surface.
  5. Cook pancakes: Scoop about 1/3 cup of batter per pancake onto the heated pan. Cook each pancake for 2 to 3 minutes on the first side until bubbles form on the surface and edges appear set. Flip carefully and cook the other side for an additional 2 to 3 minutes or until fully cooked through and golden.
  6. Keep warm (optional): Transfer cooked pancakes to a lined baking sheet and keep warm in a preheated oven set to 200°F (100°C / gas mark 1/4) while finishing the remaining batter.
  7. Garnish + serve: Serve the pancakes warm. Optional toppings include chocolate sauce, whipped cream, and a sprinkle of extra chocolate chips for added indulgence.

Notes

  • Use buttermilk for tender, fluffy pancakes and a slight tang in the flavor.
  • Ensure the pan is adequately heated before adding batter to prevent sticking.
  • Do not overmix the batter to keep the pancakes light and airy.
  • Adjust cooking time based on your stovetop’s heat settings and pan type.
  • For a dairy-free option, substitute butter and buttermilk with plant-based alternatives.
