Description
A quick and simple recipe for creamy, fluffy scrambled eggs cooked to perfection in a nonstick skillet. This classic breakfast dish features whisked eggs gently cooked with a splash of milk or water, seasoned with salt and pepper, and optionally garnished with fresh chives for a burst of color and flavor.
Ingredients
Egg Mixture
- 3 large eggs
- 1 teaspoon milk, plant milk, or water
For Cooking
- Extra-virgin olive oil or butter (for the pan)
Seasoning and Garnish
- Sea salt and freshly ground black pepper
- Chopped fresh chives (optional, for garnish)
Instructions
- Prepare the Egg Mixture: Crack the eggs into a medium bowl and add the milk or water. Whisk them together until the mixture is smooth and uniform, with no visible streaks of egg white left.
- Heat the Skillet: Brush a small nonstick skillet with extra-virgin olive oil or melt a bit of butter in it. Place the skillet over medium heat to warm it up.
- Start Cooking the Eggs: Pour the egg mixture into the hot skillet and let it sit undisturbed for a few seconds to begin setting. Then, use a rubber spatula to gently pull the eggs from the edges toward the center, forming large soft curds.
- Scramble Gently: Continue cooking over medium-low heat, folding and stirring the eggs every few seconds. Frequently scrape the spatula along the pan’s bottom and sides to create more curds and prevent the eggs from drying out.
- Finish and Season: Remove the skillet from heat when the eggs are mostly set but still slightly runny. Season with sea salt and black pepper to taste. Garnish with chopped fresh chives if desired, then serve immediately.
Notes
- Using a small amount of milk or water helps make the eggs fluffier and creamier.
- Cook the eggs low and slow to avoid overcooking and to retain a soft texture.
- Fresh chives add a mild onion flavor and a lovely green garnish but can be omitted.
- Use a nonstick skillet and a silicone or rubber spatula to prevent sticking and damage to cookware.
- For extra richness, substitute butter for olive oil when cooking.
