Ingredients
Wet Ingredients
- 1 cup butter (softened)
- 1 cup sugar
- 2/3 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Dry Ingredients
- 3 1/4 cups all-purpose flour
- 4 packages hot cocoa mix (or 3/4 cups hot cocoa mix - not sugar-free versions)
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 teaspoons baking powder
Add-ins
- 1 cup chocolate chips
- 1 cup mallow bits (mini marshmallows do not work as well and can be sticky)
Instructions
- Prepare the dough: In a large bowl, beat the softened butter and both sugars using a standing mixer until the mixture is light and fluffy. Add in the eggs and vanilla extract, then mix thoroughly to combine.
- Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, hot cocoa mix, salt, baking soda, and baking powder. Gradually beat the dry ingredients into the butter mixture until just blended. Gently stir in the chocolate chips and mallow bits. Cover the dough and chill it for at least 30 minutes, or up to 24 hours for enhanced flavor and texture.
- Preheat and shape: When ready to bake, preheat your oven to 350°F (175°C). Using a spoon or cookie scoop, drop 2 tablespoons of dough onto baking sheets lined with silicone baking mats or parchment paper. Space the dough balls about 2 inches apart to allow for spreading.
- Bake and cool: Bake the cookies for 9 to 11 minutes, or until the edges turn lightly browned. Once baked, allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
Notes
- For the best mallow bits texture, avoid using mini marshmallows as they may melt unevenly and become sticky.
- Chilling the dough for longer enhances the flavor and firmness, making cookies easier to shape and resulting in a better texture.
- Use silicone mats or parchment paper to prevent sticking and help with even baking.
- You can substitute the chocolate chips with chunks or any favorite chocolate mix-ins for variation.
