Ingredients

For the Honey Lime Chicken

  • 3 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 2 tablespoons soy sauce
  • 1 teaspoon fresh lime zest
  • 1 clove garlic, finely minced
  • 1 boneless skinless chicken breast, halved horizontally

For the Corn & Cilantro Salsa

  • 15 ounces sweet corn, drained
  • 1/2 cup red onion, finely diced
  • 1/3 cup fresh cilantro, finely chopped
  • 1 large lime (juice only)
  • Salt, to taste
  • Black pepper, to taste
  • Tajín seasoning, to taste

For Assembly

  • 1 1/2 cups cooked rice
  • Romaine lettuce, thinly sliced
  • Cojita cheese, crumbled
  • Cherry tomatoes, quartered
  • Sour cream
  • Lime wedges, for garnish

Instructions

  1. Cook the rice: Prepare the rice according to the package instructions until fluffy and set aside.
  2. Prepare the marinade: In a shallow bowl, combine honey, fresh lime juice, soy sauce, lime zest, and minced garlic to create the marinade.
  3. Prepare the chicken: Halve the chicken breast horizontally and gently pound each half to an even thickness for uniform cooking.
  4. Marinate the chicken: Submerge the chicken halves in the prepared honey lime marinade, ensuring they are well coated.
  5. Cook the chicken: Heat a large skillet over medium heat and place the chicken in a single layer. Cook for 3-4 minutes until the underside is browned and caramelized.
  6. Flip and glaze: Flip the chicken over, pour the remaining marinade over it, then continue cooking until the chicken is fully cooked and the sauce thickens to a glaze consistency.
  7. Slice the chicken: Remove the chicken from the skillet, transfer to a cutting board, and slice into bite-sized pieces. Drizzle the reduced sauce over the sliced chicken and set aside.
  8. Make the corn and cilantro salsa: In a bowl, combine drained sweet corn, diced red onion, chopped cilantro, and the juice of a lime. Season with salt, black pepper, and Tajín to taste, mixing well.
  9. Prepare the veggies: Thinly slice romaine lettuce and quarter cherry tomatoes.
  10. Assemble the bowls: Divide the cooked rice and sliced lettuce evenly between two shallow bowls. Top with sliced honey lime chicken, corn and cilantro salsa, cherry tomatoes, crumbled cojita cheese, and a dollop of sour cream.
  11. Garnish and serve: Add lime wedges on the side for extra zest and enjoy your vibrant and flavorful Honey Lime Chicken Rice Bowl.

Notes

  • To tenderize chicken evenly, use a meat mallet or rolling pin to pound it gently.
  • If you prefer a spicier kick, add chopped jalapeños to the corn salsa.
  • Cooking times may vary depending on the thickness of the chicken; ensure it is cooked through to an internal temperature of 165°F (74°C).
  • Use freshly squeezed lime juice for the best flavor impact in both the marinade and salsa.
  • For a gluten-free option, substitute soy sauce with tamari or coconut aminos.
