Description
This homemade eggnog recipe offers a rich and creamy holiday classic made from scratch. Perfectly spiced with cinnamon, nutmeg, and cloves, it combines whole milk, heavy cream, and eggs to create a smooth and velvety beverage. Enhanced with a touch of spiced rum or bourbon, this traditional festive drink is ideal for gatherings and celebrations.
Ingredients
Milk Mixture
- 2 cups whole milk
- 3 whole cloves
- 1 teaspoon ground cinnamon (plus extra for garnish, optional)
- 1/2 teaspoon ground nutmeg
Egg Mixture
- 6 large egg yolks
- 1 cup granulated sugar
Finishing Ingredients
- 2 cups heavy cream
- 1 teaspoon vanilla extract
- 1 1/4 cups spiced rum or bourbon (optional)
Instructions
- Heat the Milk and Spices: In a small saucepan, combine milk, cloves, cinnamon, and nutmeg. Slowly bring the mixture to a gentle boil, allowing the spices to infuse the milk.
- Whisk Egg Yolks and Sugar: In a medium-sized bowl, whisk together the egg yolks and granulated sugar until the mixture is fluffy, light, and pale in color, about 2 to 3 minutes.
- Temper the Eggs: Gradually add a small amount of the hot milk mixture to the egg yolks while whisking constantly to prevent the eggs from curdling. Continue to add the milk slowly until fully incorporated.
- Cook the Egg Mixture: Pour the combined egg and milk mixture back into the saucepan. Cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon, about 3 to 5 minutes. Do not allow it to boil.
- Strain and Cool: Remove the saucepan from heat and strain out the cloves. Let the mixture cool for one hour at room temperature.
- Add Cream and Flavorings: After cooling, whisk in the heavy cream, vanilla extract, and spiced rum or bourbon if using.
- Chill: Refrigerate the eggnog for several hours or overnight to allow flavors to meld and serve chilled, optionally garnished with a sprinkle of cinnamon.
Notes
- Tempering the eggs is crucial to avoid scrambling; add the hot milk slowly while whisking vigorously.
- You can omit the alcohol to make it a family-friendly drink.
- Use fresh, high-quality eggs for best flavor and safety.
- Store leftover eggnog in the refrigerator and consume within 2 days.
- Garnish with a sprinkle of cinnamon or freshly grated nutmeg before serving for an extra festive touch.
