Description

Enjoy a healthy and crispy chicken wrap made with tender chicken breast strips coated in a crunchy cornflake crust, air-fried to perfection. This recipe combines fresh lettuce, juicy tomatoes, red onion, and melted cheesy singles all wrapped in a soft tortilla for a delicious and satisfying meal that's ready in just 15 minutes.

Ingredients

Chicken and Coating

  • 600 g chicken breast, cut into strips
  • 200 g cornflakes
  • 3 tbsp flour
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp paprika
  • 2 eggs
  • Vegetable oil spray (2-4 sprays per chicken strip)
  • Flaky salt

Wrap and Salad

  • 1 round lettuce
  • 6 salad tomatoes, thinly sliced
  • 8 small white wraps or 4 large wraps
  • 200 g cheesy singles (processed cheese slices)
  • 1 red onion, thinly sliced

Instructions

  1. Preheat Airfryer: Preheat your air fryer to 200°C (390°F) to ensure it’s ready for cooking the chicken strips evenly and to achieve maximum crispiness.
  2. Prepare Ingredients: Prepare the salad ingredients by washing and slicing the lettuce, tomatoes, and red onion. Cut the chicken breasts into strips and pat them dry with a paper towel to help the coating stick better.
  3. Crush Cornflakes: Place the cornflakes into a sealed ziplock bag over a large chopping board and crush them using a rolling pin or a bottle until you have a coarse breadcrumb texture.
  4. Set Up Breading Stations: On one plate, put the seasoned flour (season with flaky salt). On a second plate, whisk the eggs. On a third plate, mix the crushed cornflakes with onion powder, garlic powder, and paprika.
  5. Bread the Chicken: Coat each chicken strip first in the flour, then dip into the egg, and finally press into the seasoned cornflake mixture. Lay the coated strips on a tray.
  6. Air Fry the Chicken: Spray the breaded chicken strips lightly with vegetable oil. Arrange them in a single layer in the air fryer basket, taking care not to overlap. Cook at 200°C for 5 minutes, then flip and cook for another 5 minutes until golden and crispy.
  7. Season the Chicken: Once cooked, sprinkle the hot crispy chicken strips generously with flaky salt for extra flavor.
  8. Assemble the Wrap: Place a large tortilla on a plate, add a layer of lettuce, sliced tomato, and red onion. Add two slices of cheesy singles on top, then add a few crispy chicken goujons. Roll up the wrap tightly and serve immediately.

Notes

  • If your air fryer basket is small, cook the chicken in batches to avoid overcrowding and ensure even crispiness.
  • Patting the chicken dry before coating is crucial to help the breading stick properly.
  • For extra flavor, you can add a light drizzle of your favorite sauce or a sprinkle of fresh herbs inside the wrap.
  • You can use gluten-free wraps if needed to make this gluten free.
  • Leftover chicken strips can be stored in the fridge and reheated in the air fryer for a few minutes to retain crispiness.
