Description

These healthy chocolate cupcakes offer a deliciously moist and rich treat made with wholesome ingredients like coconut sugar and applesauce. Perfect for those wanting a nutritious twist on a classic dessert, they are easy to prepare, naturally sweetened, and can be customized with different flours and frostings to suit dietary needs.

Ingredients

Dry Ingredients

  • 1 cup flour (120g) (spelt flour recommended; oat flour, white flour, or gluten free all-purpose flour can be used)
  • 1/4 cup unsweetened cocoa powder
  • 2 tbsp Dutch cocoa powder (or additional unsweetened cocoa powder)
  • 1 cup coconut sugar (or xylitol)
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients

  • 1/2 cup water
  • 1/2 cup applesauce (or mashed banana)
  • 1/4 cup coconut oil (or additional water)
  • 2 tsp pure vanilla extract
  • 1 tsp apple cider vinegar

Instructions

  1. Prepare the Oven and Pan: Preheat your oven to 350°F (175°C) and grease or line a cupcake tin with paper liners to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the flour, unsweetened cocoa powder, Dutch cocoa powder, coconut sugar, baking soda, and salt. Stir thoroughly to blend all the dry components evenly.
  3. Add Wet Ingredients: Pour in the water, applesauce, coconut oil, vanilla extract, and apple cider vinegar into the dry mixture. Stir until just combined to form a smooth batter without overmixing.
  4. Portion Batter: Spoon the batter into the prepared cupcake tin, filling each cup about two-thirds full to allow space for rising during baking.
  5. Bake: Place the tin in the preheated oven and bake for about 20 minutes or until a toothpick inserted into the center of a cupcake comes out mostly clean, indicating doneness.
  6. Cool: Remove the cupcakes from the oven and allow them to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
  7. Optional Storage Tip: For lower fat cupcakes with improved texture and taste, cover loosely and let sit overnight at room temperature. This also helps cupcake liners peel off easily.
  8. Serve: Enjoy the cupcakes as is or frost them with your favorite healthy frosting.

Notes

  • Spelt flour offers a great texture and flavor, but oat, white, or gluten-free all-purpose flours can be used as substitutes.
  • For a lower carbohydrate version, consider using a low-carb flour blend such as almond or coconut flour (adjust liquid as needed).
  • Use applesauce or mashed bananas to reduce fat content while maintaining moisture.
  • Using apple cider vinegar helps the cupcakes rise by reacting with baking soda.
  • Letting the cupcakes sit overnight can improve texture and flavor, especially for low-fat versions.
  • These cupcakes can be enjoyed unfrosted or paired with a healthy frosting of your choice.
