Ingredients
Meat and Vegetables
- 1 Tbsp olive oil
- 1 lb extra lean ground beef
- 1 small white onion, diced small
- 1 medium zucchini, diced small
- 3 cloves garlic, minced
- 2 big handfuls baby spinach, roughly chopped
Seasonings and Sauces
- 1 Tbsp tomato paste
- 1 Tbsp chili powder
- ¾ tsp salt
- Black pepper, to taste (more for serving)
- ½ tsp crushed red pepper flakes (optional, more for serving)
Pasta and Liquids
- 1 13-oz box uncooked whole wheat or protein pasta (macaroni or orecchietta)
- 2 ½ cups beef broth
- 1 cup milk
Cheese
- 1 cup shredded sharp cheddar cheese
Instructions
- Heat the oil: Heat olive oil in a large non-stick skillet or pot over medium heat to prepare for cooking the beef and vegetables.
- Cook beef and vegetables: Add the ground beef, diced onion, and zucchini to the skillet. Break up the beef with a spatula into small, even crumbles and cook until the meat is mostly browned and the vegetables are slightly softened, about 6-8 minutes.
- Add garlic and seasonings: Stir in the minced garlic, tomato paste, chili powder, salt, black pepper, and crushed red pepper flakes. Cook for 1-2 minutes until the garlic is fragrant, stirring frequently to combine the flavors.
- Add pasta and liquids: Pour in the uncooked pasta, beef broth, and milk. Stir well, making sure all ingredients are submerged under the liquid. Add more broth if necessary to cover the pasta.
- Simmer the pasta: Cook uncovered for 8-12 minutes, stirring occasionally, until the pasta is al dente. Maintain a gentle simmer; reduce heat if the mixture starts boiling vigorously.
- Finish with spinach and cheese: Stir in the chopped baby spinach and shredded cheddar cheese until melted and well combined. If there is excess liquid, let the dish rest for 5 minutes, then stir again before serving.
- Serve: Serve your healthier hamburger helper warm with extra freshly cracked black pepper and grated cheddar cheese on top, if desired. Enjoy your wholesome and tasty meal!
Notes
- Use whole wheat or high-protein pasta to maximize nutritional value.
- Adjust crushed red pepper flakes according to your desired spice level.
- If needed, add extra broth or milk during cooking to prevent the pasta from drying out.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop or microwave.
- For a dairy-free version, substitute milk with almond or oat milk and use dairy-free cheese.
