Description

Healing Cabbage Soup is a comforting and easy-to-make soup that soothes the body during a cold or on chilly winter nights. This flavorful soup features tender cabbage, savory chicken bouillon, and stewed tomatoes, with the option to add extra vegetables, leftover chicken, or rice for a heartier meal.

Ingredients

Main Ingredients

  • 3 tablespoons olive oil
  • ½ onion, chopped
  • 2 cloves garlic, chopped
  • 2 quarts water
  • 4 teaspoons chicken bouillon granules
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper, or to taste
  • ½ head cabbage, cored and coarsely chopped
  • 1 (14.5 ounce) can Italian-style stewed tomatoes, drained and diced

Instructions

  1. Heat Aromatics: Heat olive oil in a large stockpot over medium heat. Add the chopped onion and garlic, cooking and stirring occasionally until the onion softens, about 5 minutes.
  2. Add Liquid and Seasonings: Stir in the water, chicken bouillon granules, salt, and black pepper. Bring the mixture to a boil over medium-high heat.
  3. Cook Cabbage: Once boiling, add the chopped cabbage to the pot. Reduce the heat to a simmer and cook until the cabbage wilts, approximately 10 minutes.
  4. Add Tomatoes and Simmer: Stir in the drained and diced stewed tomatoes. Return the soup to a boil, then reduce heat again and simmer for 15 to 30 minutes, stirring often to blend flavors.
  5. Serve: Remove from heat and serve the soup hot. Enjoy the comforting and healing qualities of this easy-to-prepare cabbage soup.
