Description

These Hash Brown Egg Nests are a delightful breakfast treat featuring crispy shredded potato nests baked to golden perfection, filled with baked eggs and topped with melted cheese. Easy to prepare and customizable, they make a perfect morning meal for family and friends.

Ingredients

Hash Brown Nests

  • 2 medium russet potatoes (about 2 cups shredded)
  • Cooking spray (for greasing and spraying)
  • Salt and pepper (to taste)

Egg Filling

  • 4 large eggs
  • Salt and pepper (to taste)
  • 1/2 cup shredded cheese
  • Parsley (for serving, optional)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and generously grease a 6-cup muffin pan with cooking spray to prevent sticking.
  2. Prepare the potatoes: Peel the russet potatoes and shred them using a large box grater. Place the shredded potatoes in a colander and rinse under cold water until the water runs clear to remove excess starch. Dry the potatoes thoroughly using paper towels to ensure crispiness.
  3. Form the nests: Evenly divide the dried hash browns between the six muffin cups. Press and shape them tightly into nests using your fingers or a small measuring cup. Season each with salt and pepper, then spray the tops again with cooking spray for extra crispness.
  4. Bake the nests: Place the muffin pan in the oven and bake the nests for 15 to 20 minutes until the edges are golden brown and crispy. Remove the pan from the oven.
  5. Prepare the egg mixture: In a bowl, whisk together the eggs and season with salt and pepper. Optionally, add any preferred toppings into the egg mixture for variation.
  6. Fill the nests and add cheese: Carefully pour the whisked eggs evenly into each hash brown nest. Sprinkle the shredded cheese on top of each filled nest.
  7. Bake until set: Return the muffin pan to the oven and bake for another 12 to 15 minutes until the egg whites are fully set and the cheese is melted and bubbly.
  8. Cool and serve: Allow the nests to cool for 5 minutes before gently removing them from the muffin pan. Garnish with chopped parsley, if desired, and serve warm.

Notes

  • Make sure to dry the shredded potatoes thoroughly to achieve crispy hash brown nests.
  • Customize the egg mixture by adding diced vegetables, cooked bacon, or herbs for extra flavor.
  • Egg nests can be prepared ahead of time and reheated in the oven for a quick breakfast.
  • Using cooking spray generously helps prevent sticking and promotes crispiness.
