Halo-Halo is a classic Filipino dessert that features a refreshing mix of shaved ice, sweetened beans, tropical fruits, and creamy ube ice cream. - 1/4 cup sweetened red beans
- 1/4 cup sweetened white beans
- 1 large banana, thinly sliced
- 1/4 cup jackfruit, canned and drained, sliced
- 1/4 cup macapuno strips, drained
- 1/4 cup nata de coco, drained
- 1/4 cup red palm seeds (Kaong), drained
- 1/4 cup green palm seeds (Kaong), drained
Ice and Milk
- 4 cups shaved ice (from about 6 cups of ice cubes)
- 1 cup evaporated milk, divided
Toppings
- 1/2 cup Cap'n Crunch with Crunch Berries cereal
- 2 scoops ube ice cream (store-bought or homemade)
Instructions
- Prepare Ingredients: Gather all ingredients and place two tall parfait glasses ready for assembling the Halo-Halo dessert.
- Layer Beans: Distribute half of the sweetened red and white beans evenly into the bottom of each glass as the base layer.
- First Ice Layer: Shave about half of the ice cubes using an ice shaver, blender, or food processor until snow-like in texture. Place approximately 1/2 cup of this shaved ice over the beans in each glass.
- Add Fruits: Add thin banana slices and drained jackfruit on top of the ice layer, then add another 1/2 cup of shaved ice to cover the fruits.
- Middle Layer: Scatter the macapuno strips and nata de coco evenly on top of the ice layer in each glass.
- Second Ice Layer: Process the remaining ice cubes to create more shaved ice. Add another 1/2 cup of shaved ice on top of the middle fruit layer in each glass.
- Add Palm Seeds: Spread the drained red and green palm seeds (Kaong) over the shaved ice.
- Top with Last Ice Layer: Add the final 1/2 cup of shaved ice on top of each glass, doming it slightly to give an attractive peak.
- Pour Evaporated Milk: Drizzle 1/2 cup of evaporated milk on top of each parfait to soak the layers.
- Final Toppings: Place one scoop of ube ice cream on top of each glass, then sprinkle with Cap'n Crunch with Crunch Berries cereal for added crunch.
- Serve Immediately: Serve the Halo-Halo immediately with a long spoon, and mix (halo-halo) the layers before enjoying to experience the combination of textures and flavors.
