Ingredients
Meat
- 1 lb ground turkey
Vegetables
- 2 medium sweet potatoes
- 2 small zucchini
Other
- 2/3 cup shredded parmesan cheese
- 1 1/2 tsp garlic powder
- 1 tsp rosemary
- 5 tbsp olive oil
- Salt & pepper to taste
Instructions
- Preheat Oven: Set the oven to 400 degrees Fahrenheit to prepare for roasting the sweet potatoes.
- Prepare Sweet Potatoes: Peel and chop the sweet potatoes into bite-sized pieces. Place them in a large baking dish and toss with 2 tablespoons of olive oil, 1/2 teaspoon garlic powder, 1/2 teaspoon rosemary, salt, and pepper evenly distributed.
- Bake Sweet Potatoes: Place the baking dish in the oven and bake the sweet potatoes for 30 minutes until they begin to soften and brown.
- Brown Ground Turkey: While the sweet potatoes bake, heat 1 tablespoon of olive oil in a pan over medium heat. Add the ground turkey along with 1 teaspoon garlic powder, 1/2 teaspoon rosemary, salt, and pepper. Cook until browned and cooked through, stirring to break up the meat evenly.
- Chop Zucchini: Slice the zucchini and then quarter the slices to create small pieces that will cook evenly in the bake.
- Combine Sweet Potatoes, Turkey, and Zucchini: Remove the partially baked sweet potatoes from the oven. Add the browned ground turkey and chopped zucchini to the baking dish and mix well to combine all ingredients.
- Bake Again: Return the dish to the oven and bake for an additional 10 minutes to allow the zucchini to soften and flavors to meld.
- Add Olive Oil and Cheese: Remove the dish from the oven again. Drizzle with the remaining 2 tablespoons of olive oil and gently mix to coat. Then evenly sprinkle the shredded parmesan cheese on top.
- Final Bake: Place the dish back in the oven and bake for a final 10 minutes until the cheese is melted and golden brown.
- Serve: Take the bake out of the oven, let it cool slightly, and enjoy your flavorful Ground Turkey Sweet Potato Bake.
