Description

This Grilled Cheese Burrito recipe creatively combines seasoned ground beef, flavorful rice, and a blend of cheeses inside a soft flour tortilla, grilled to golden perfection. Perfect for a satisfying meal with a crispy, cheesy crust and deliciously warm, gooey filling.

Ingredients

Meat and Seasoning

  • 1 lb. ground beef
  • 6 Tbsp water
  • 2 Tbsp taco seasoning (store-bought or homemade)

Filling

  • 4 large flour tortillas (burrito size)
  • 1 1/3 cups cooked seasoned rice
  • 1 cup shredded cheese (combination of cheddar, Monterey Jack, and mozzarella)
  • 1/2 cup nacho cheese sauce, warmed
  • 1/2 cup chipotle sauce
  • 1/4 cup sour cream
  • 1/4 cup tortilla strips

For Cooking and Assembly

  • 2 Tbsp unsalted butter

Instructions

  1. Cook the Beef: Heat a large skillet over medium heat. Add the ground beef, breaking it up with a spatula or wooden spoon. Cook for 5-7 minutes until browned and no longer pink.
  2. Drain and Season: Remove excess grease if needed. Return skillet to low heat, add water and taco seasoning to the beef, stirring to combine. Cook for about 2 minutes until the mixture thickens slightly.
  3. Warm the Tortillas: Heat the flour tortillas in the microwave or on a griddle until soft and pliable. Lay them flat for filling.
  4. Assemble Burritos: Spoon about 1/2 cup of the beef mixture onto the center of each tortilla. Add 1/3 cup of cooked rice, 2 Tbsp shredded cheese, 2 Tbsp nacho cheese sauce, 2 tsp chipotle sauce, 1 tsp sour cream, and 1 Tbsp tortilla chips over the beef. Adjust ingredient amounts if desired. Fold sides inward and roll up tightly.
  5. Preheat Griddle: Heat a griddle or large skillet over medium heat.
  6. Prepare for Grilling: Brush the top and bottom of each burrito with melted unsalted butter. Sprinkle 1 Tbsp shredded cheese on top of each burrito and press gently to adhere.
  7. Grill Burritos: Place each burrito cheese-side down on the heated griddle. Grill for about 1 minute until the cheese is golden and crispy. Add another tablespoon of shredded cheese on top, press down, then flip and grill the other side for about 1 minute until golden.
  8. Serve and Enjoy: Optionally, add extra toppings like sour cream, guacamole, or salsa and serve warm.

Notes

  • Use any taco seasoning blend you prefer or make your own for customized flavor.
  • Adjust cheese types and quantities to taste or dietary preferences.
  • Ensure tortillas are warmed well to prevent cracking when rolling.
  • Butter helps create a crispy, golden exterior and enhances flavor.
  • For extra crispiness, cook slightly longer but be careful not to burn the cheese.
  • Leftover burritos reheat well in a skillet or oven to maintain crispness.
