Description

The Green Goddess Sandwich is a vibrant and flavorful sandwich featuring layers of fresh mozzarella, juicy tomatoes, creamy avocado, and crisp greens, all topped with a zesty green goddess mayonnaise made from fresh herbs and anchovy paste. Enhanced by tangy pickled onions and radish, this sandwich offers a perfect balance of creamy, tangy, and fresh flavors in every bite.

Ingredients

For the Pickled Onions and Radish:

  • 1 cup daikon radish, julienned
  • 1 small white onion, sliced
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1/4 cup white balsamic vinegar (or white wine vinegar)
  • 1/2 cup warm water

For the Green Goddess Mayonnaise:

  • 1/2 cup mayonnaise
  • 1/4 cup packed basil leaves
  • 1/4 cup packed tarragon leaves
  • 1/4 cup packed chopped chives
  • 2 cloves garlic, grated
  • 2 teaspoons anchovy paste (or 2 anchovy fillets, chopped)
  • 1/2 lemon (zest and juice)
  • Salt and pepper to taste

For the Green Goddess Sandwiches:

  • 8 slices bread
  • 1 (8 ounce) ball fresh mozzarella, sliced
  • 1 large tomato, sliced (green heirloom preferred but any tomato works)
  • 1 avocado, sliced
  • 1 cup baby spinach (or 4 leaves lettuce)
  • 1 cup microgreens or sprouts

Instructions

  1. Prepare the Pickled Onions and Radish: In a bowl, combine the julienned daikon radish, sliced white onion, sugar, salt, white balsamic vinegar, and warm water. Mix well and let sit for at least 30 minutes to allow the flavors to meld and the vegetables to pickle slightly.
  2. Make the Green Goddess Mayonnaise: In a food processor, blend together the mayonnaise, fresh basil leaves, tarragon leaves, chopped chives, grated garlic, anchovy paste, lemon zest, and juice until smooth and creamy. Season with salt and pepper to taste. (Optional: Stir in some grated Parmigiano Reggiano for added richness.)
  3. Assemble the Sandwiches: Lay out the bread slices and spread a generous amount of green goddess mayonnaise on each slice. Layer sliced fresh mozzarella, tomato slices, avocado slices, baby spinach or lettuce leaves, and microgreens or sprouts. Add some pickled onions and radish on top for tangy crunch. Close the sandwich with another slice of bread and serve immediately to enjoy the fresh and vibrant flavors.

Notes

  • Using green heirloom tomatoes adds a beautiful color and keeps the sandwich visually green, but other tomato varieties work well too.
  • Allow pickled onions and radish to sit longer if you prefer a stronger tangy flavor.
  • Adding grated Parmigiano Reggiano cheese to the green goddess mayonnaise adds an extra depth of flavor.
  • Serve the sandwich fresh to prevent the bread from becoming soggy due to the mayonnaise and fresh vegetables.
