Description

This vibrant Chopped Green Goddess Salad combines fresh cabbage, cucumbers, and green onions tossed with a creamy, herbaceous dressing made from basil, baby spinach, cashews, parmesan, and lemon juice. It’s a quick and refreshing salad perfect for serving as a light appetizer or side dish, featuring a tangy, creamy dressing that complements the crisp, fresh vegetables, and pairs wonderfully with crunchy tortilla chips.

Ingredients

Vegetables

  • ½ head of Green cabbage, chopped
  • 3 Persian cucumbers, chopped
  • 1 bundle of green onions, chopped

Dressing

  • 1 cup baby spinach
  • 1 cup fresh basil
  • 2 garlic cloves
  • 1 small shallot
  • 2 lemons, juiced
  • ¼ cup olive oil
  • ¼ cup cashews
  • ⅓ cup grated parmesan cheese
  • 2 tablespoons rice vinegar
  • 1 teaspoon salt

Serving

  • Tortilla chips, for serving (optional)

Instructions

  1. Prepare the Vegetables: Place the chopped green cabbage, cucumbers, and green onions into a large mixing bowl. Ensure they are chopped into bite-sized pieces for easy eating.
  2. Make the Dressing: Add the baby spinach, fresh basil, garlic cloves, small shallot, lemon juice, olive oil, cashews, grated parmesan cheese, rice vinegar, and salt into a blender or food processor. Blend the ingredients until the mixture turns a bright green color and achieves a creamy, smooth consistency.
  3. Toss the Salad: Pour the prepared green goddess dressing over the chopped vegetables in the large bowl. Toss thoroughly to ensure all the vegetables are evenly coated with the dressing.
  4. Serve: Serve the salad immediately for the freshest texture. Optionally, enjoy with tortilla chips on the side for added crunch and flavor.

Notes

  • For a vegan version, omit parmesan cheese or substitute with a plant-based alternative.
  • If cashews are not available, soaked almonds can be used as a substitute in the dressing.
  • Make the dressing ahead of time and store in the refrigerator for up to 2 days for convenience.
  • Adjust salt and lemon juice to taste to balance the flavors.
