Description

A traditional Greek Moussaka recipe featuring layers of fried potatoes, zucchini, and eggplants, topped with a rich meat sauce and creamy bechamel, baked to perfection. This hearty dish offers a perfect balance of robust Mediterranean flavors and textures.

Ingredients

Vegetables

  • 4 potatoes
  • 4 zucchini
  • 4 eggplants
  • 2 cups olive oil for frying (varies depending on pan size)
  • 1 tbsp salt
  • 1/2 tbsp pepper

Meat Sauce

  • 2 tbsp olive oil
  • 1 large red onion, finely chopped
  • 1 medium-sized garlic bulb, minced
  • 1 kg beef mince meat
  • 1 cup red wine
  • 800 grams crushed canned tomatoes
  • 1 tbsp salt
  • 1/2 tsp white pepper
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 2 tsp sugar
  • 1/2 tsp thyme
  • 1 tsp oregano
  • 3 bay leaves
  • 1 bunch fresh parsley, finely chopped

Bechamel Sauce

  • 150 grams unsalted butter
  • 1 cup plain flour
  • 1 litre milk
  • 2 egg yolks
  • 1/2 tsp nutmeg
  • 250 grams Kefalograviera cheese, finely shredded (substitutes parmesan, kasseri, or pecorino)

Cheese

  • 200 grams Kefalograviera cheese, finely shredded (substitutes parmesan, kasseri, or pecorino) for layering

Instructions

  1. Prepare Vegetables: Slice the potatoes, zucchini, and eggplants into circular disks for even cooking and layering.
  2. Fry Vegetables: Heat olive oil in a pan over medium-high heat and fry the vegetable slices until cooked through and golden brown. Drain on paper towels or wire racks to remove excess oil.
  3. Cook Meat Sauce: In a large pot over high heat, heat olive oil, then sauté the finely chopped onion and minced garlic until soft and translucent.
  4. Brown Meat: Add beef mince and cook until browned, breaking up the meat as it cooks for even texture.
  5. Add Wine: Pour in red wine and allow it to simmer until mostly evaporated, approximately 3 minutes.
  6. Simmer Tomatoes and Spices: Stir in crushed tomatoes and season with salt, white pepper, cinnamon, nutmeg, sugar, thyme, oregano, bay leaves, and chopped parsley. Simmer on low heat for about 10 minutes. Remove bay leaves afterward.
  7. Make Bechamel: In a saucepan over medium heat, melt butter. Add flour gradually while stirring continuously to create a smooth roux.
  8. Add Milk: Slowly incorporate milk while stirring constantly to prevent lumps, cook until sauce thickens and becomes creamy.
  9. Finish Bechamel: Stir in egg yolks, nutmeg, and shredded Kefalograviera cheese until combined. Continue cooking until sauce thickens and bubbles, then remove from heat.
  10. Preheat Oven: Set oven to 165°C (fan-forced) to prepare for baking.
  11. Layer Vegetables and Cheese: In a baking dish, arrange potato slices in a single layer, season with salt and pepper, and sprinkle with cheese. Repeat layering with eggplant, zucchini, and eggplant again, seasoning and sprinkling cheese on each layer.
  12. Add Meat Sauce: Pour the meat sauce evenly over the layered vegetables, spreading it out to cover the entire surface.
  13. Top with Bechamel: Spread bechamel sauce evenly over the meat sauce layer for a creamy finish.
  14. Bake: Place dish in preheated oven and bake for 40 minutes or until top is golden brown. Begin checking for doneness at 30 minutes to avoid overcooking.
  15. Rest: Let the moussaka cool and rest for at least 30 minutes before cutting to allow layers to set.
  16. Serve: Slice into portions and enjoy your authentic Greek moussaka.

Notes

  • Use a wire rack in addition to paper towels to drain fried vegetables thoroughly for less oil retention.
  • If Kefalograviera cheese is unavailable, parmesan, kasseri, or pecorino are excellent substitutes.
  • Allowing the moussaka to rest helps the layers firm up for cleaner slicing.
  • Adjust seasoning to taste, especially salt and spices, to personal preference.
  • Ensure the bechamel sauce is smooth to avoid lumps in the final dish.
