Perfect for a quick Mediterranean-inspired dinner that delivers wholesome protein and hearty vegetables in every bite.

Ingredients

Chicken

  • 1.5 lb skinless boneless chicken thighs
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons olive oil

Vegetables and Flavorings

  • 8 oz grape tomatoes, halved
  • 5 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 5 oz fresh spinach, chopped

Rice and Legumes

  • 3 tablespoons freshly squeezed lemon juice
  • 2 cups cooked jasmine rice
  • 15 oz canned chickpeas, drained
  • 1 tablespoon olive oil (additional for rice)

Feta Cheese Mixture

  • 6 oz feta cheese, diced into small cubes
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 teaspoon dried oregano
  • 2 tablespoons chopped fresh oregano (optional)

Garnishes and Seasoning

  • Fresh oregano for garnish
  • Salt and black pepper, to taste

Instructions

  1. Season the Chicken: Pat the chicken thighs dry. Evenly season them with dried oregano, paprika, salt, and red pepper flakes to infuse bold Mediterranean flavors into the meat.
  2. Heat the Skillet: Place a high-sided, heavy-bottomed skillet over medium heat. Let it heat for 2 minutes to ensure even cooking throughout.
  3. Cook the Chicken: Add 2 tablespoons of olive oil to the skillet and place the chicken thighs skinless side down. Cook undisturbed on medium heat for 5 minutes. If the oil begins to smoke, reduce heat to low-medium to prevent burning the chicken juices.
  4. Flip and Finish Cooking: Turn the chicken thighs over, reduce heat to low-medium, and cook for another 5 minutes or until the internal temperature reaches 165°F (74°C). Remove the chicken from the skillet and set aside.
  5. Sauté Tomatoes and Garlic: In the same skillet, add half of the halved grape tomatoes, minced garlic, dried oregano, salt, and 1 tablespoon olive oil. Cook over medium heat for 2 minutes until the tomatoes soften and start releasing their juices.
  6. Wilt the Spinach: Stir in the chopped fresh spinach and cook until just wilted, which preserves its vibrant color and nutrients.
  7. Add Rice and Chickpeas: Mix in the cooked jasmine rice and drained chickpeas, stirring well to combine everything evenly.
  8. Incorporate Lemon Juice and Remaining Tomatoes: Add 3 tablespoons of freshly squeezed lemon juice and the remaining grape tomatoes to the skillet. Reheat over medium heat while stirring to meld flavors. Add an extra tablespoon of olive oil for added richness, if desired.
  9. Prepare Feta Cheese Mixture: In a medium bowl, combine diced feta cheese with extra virgin olive oil, lemon juice, dried oregano, and optional fresh oregano. Toss gently to coat the feta with the herbs and citrus.
  10. Mix Feta into Rice: Stir half of the feta mixture into the skillet with the lemon rice, allowing some cheesy flavor to meld into the rice and vegetables.
  11. Add Cooked Chicken: Slice the cooked chicken thighs and add them back into the skillet. Reheat gently on medium heat to combine the flavors harmoniously.
  12. Final Topping and Garnish: Top the dish with the remaining feta mixture and sprinkle fresh oregano over the top for a fresh herbal finish. Season with salt and black pepper to taste and serve warm.

  • Feel free to adjust the red pepper flakes to your preferred spice level.
  • Ensure chicken reaches an internal temperature of 165°F (74°C) for safe consumption.
  • This dish can be served with a side of Greek yogurt or tzatziki for added creaminess.
