Description

This Gochujang Pasta with Eggplant is a vibrant, flavor-packed fusion dish combining tender sautéed eggplant with a spicy, savory gochujang-based sauce. Finished with Parmesan cheese and fresh scallions, this dish delivers a perfect balance of creamy, spicy, and umami notes in just 25 minutes.

Ingredients

Vegetables

  • 1 lb eggplant, chopped into 1-inch pieces
  • 3 scallions (green onions), thinly sliced (white/light green parts separated from dark green parts)

Seasonings & Sauces

  • 1¼ teaspoons fine sea salt (divided use)
  • 1 tablespoon tamari (or soy sauce)
  • 1 teaspoon toasted sesame oil
  • 4 teaspoons gochujang paste (not sauce)

Oils & Butter

  • 1 tablespoon grapeseed oil (or other neutral oil)
  • 3 tablespoons butter (vegan if needed)

Pasta & Cheese

  • 6 oz dried linguine (or spaghetti)
  • ¼ cup finely grated Parmesan cheese (vegan if needed)

Other

  • 2 cloves garlic, minced
  • Crispy onions and/or scallion curls (for garnish)

Instructions

  1. Prep Scallions: Thinly slice the scallions, separating the white and light green parts for cooking and the dark green parts for garnish and finishing.
  2. Prep Eggplant: Chop the eggplant into large 1-inch pieces. In a medium bowl, mix 3 cups cold water with 1 teaspoon fine sea salt. Submerge the eggplant in the salt water using a smaller bowl on top to keep it submerged. Let soak for 10 minutes, then drain and pat dry.
  3. Cook Eggplant: Heat a large stainless steel skillet over medium-high heat until water flicked on it bounces and skids. Add grapeseed oil and the eggplant in a single layer. Sprinkle with remaining ¼ teaspoon salt. Cook, stirring occasionally, about 8 to 10 minutes until golden brown on all sides. Adjust heat and oil as needed to prevent sticking. Transfer to a bowl and toss gently with tamari and toasted sesame oil. Set aside.
  4. Cook Pasta: Bring a large pot of salted water to a boil. Cook linguine until al dente according to package directions. Reserve 1 cup of pasta water, then drain noodles.
  5. Build Sauce: Using the same skillet used for eggplant, cool slightly to prevent butter from burning. Melt butter over low heat. Add minced garlic and white/light green scallions, cooking until garlic is pale golden, about 2 minutes. Add gochujang paste and ⅔ cup reserved pasta water, whisking to form a smooth sauce.
  6. Finish Pasta: Add cooked linguine to the skillet and toss to coat with the sauce. Add grated Parmesan cheese and the dark green scallion parts, tossing again. Add splashes of reserved pasta water as needed to achieve a silky sauce consistency. Taste and adjust seasoning as desired.
  7. Garnish and Serve: Plate the pasta and garnish with crispy onions and/or scallion curls if using. Serve immediately for best flavor and texture.

Notes

  • Note 1: Soaking eggplant in salt water helps remove bitterness and reduces oil absorption during cooking.
  • Note 2: Use vegan butter for a vegan version of this dish.
  • Note 3: Use gochujang paste, not sauce, for authentic flavor and proper sauce consistency.
  • Note 4: For a vegan option, substitute Parmesan with a plant-based cheese alternative or nutritional yeast.
  • Note 5: A stainless steel skillet is preferred to achieve proper browning of the eggplant.
