Ingredients
Egg Mixture
- 8 eggs
- 1/4 cup milk
- 2 tablespoons chopped fresh chives, plus more for garnish
Vegetables & Cheese
- 1 tablespoon butter
- 8 oz baby bella mushrooms, sliced
- 2 packed cups spinach, roughly chopped or torn
- 4 oz goat cheese, crumbled
Seasoning
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat Oven: Heat oven to 425 degrees F to prepare for baking the frittata.
- Mix Eggs: In a medium bowl, whisk together the eggs, milk, and chopped fresh chives until fully combined and slightly frothy.
- Sauté Mushrooms: Heat the butter in a large oven-safe skillet over medium heat. Add the sliced baby bella mushrooms and cook, stirring occasionally, for about 5 minutes until mushrooms release their moisture and become slightly browned.
- Cook Spinach: Add the chopped spinach to the skillet and cook for about 1 minute just until wilted. Season the vegetables with salt and black pepper to taste.
- Add Egg Mixture: Pour the egg mixture over the sautéed vegetables in the skillet. Stir gently to evenly distribute the mushrooms and spinach throughout the eggs.
- Add Goat Cheese: Sprinkle the crumbled goat cheese evenly over the top of the egg and vegetable mixture.
- Bake the Frittata: Transfer the oven-safe skillet to the preheated oven and bake for 12 to 15 minutes or until the eggs are fully set and the top is lightly golden.
- Serve: Remove from oven and garnish with additional chopped chives. Cut into wedges and serve warm.
Notes
- Use an oven-safe skillet to easily transfer from stovetop to oven.
- Ensure mushrooms are cooked thoroughly to avoid excess moisture in the frittata.
- Adjust seasoning according to your taste preference.
- For a fluffier texture, you can separate egg whites and yolks and whip the whites before folding them into yolks.
- Substitute milk with a dairy-free alternative for a lactose-free version.
