Ingredients
Shrimp Mixture
- 2 lbs. extra large shrimp, peeled & deveined
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 2 tablespoons grated parmesan cheese
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black pepper
Vegetables
- 2 small zucchini, sliced into 1″ coins
- 1 small yellow squash, sliced into 1″ coins
- 3/4 cup cherry tomatoes
- Olive oil (for drizzling)
- Salt and pepper, to taste
Garnish
- 1/3 cup fresh basil, chiffoned
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the shrimp and vegetables.
- Prepare Shrimp: Place the peeled and deveined shrimp into a large mixing bowl, ready to be seasoned.
- Make Garlic Parmesan Mixture: In a small bowl, combine minced garlic cloves, smoked paprika, black pepper, grated parmesan cheese, and olive oil. Stir well to create a flavorful marinade.
- Coat Shrimp: Pour the garlic parmesan mixture over the shrimp in the large bowl. Using your hands, toss thoroughly to ensure each shrimp is evenly coated with the marinade.
- Prepare Vegetables: In another small bowl, combine sliced zucchini, yellow squash, and cherry tomatoes. Drizzle with olive oil and season with salt and pepper, then toss to coat all the vegetables evenly.
- Arrange on Baking Sheet: Spread the shrimp and vegetables in a single layer on a baking sheet. Use a second baking sheet if needed to avoid overcrowding and to promote even roasting.
- Bake: Place the baking sheet(s) in the preheated oven and bake for 12 minutes, or until the shrimp are fully cooked and the vegetables are tender.
- Add Fresh Basil: After removing the baking sheet(s) from the oven, sprinkle the fresh chiffoned basil over the shrimp and vegetables to add a burst of fresh flavor.
- Serve: Serve the roasted shrimp and vegetables immediately while hot, enjoying a vibrant and nutritious meal.
Notes
- Ensure the shrimp are spread out in a single layer to allow for even cooking and browning.
- You can substitute yellow squash with more zucchini or other summer squash according to availability.
- If you prefer milder seasoning, reduce the smoked paprika or omit the black pepper.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated gently.
- For a spicier version, consider adding a pinch of red pepper flakes to the garlic parmesan mixture.
