Description

A delicious and healthy Garlic Mushroom and Spinach Pizza that combines a creamy spinach spread with roasted garlic, sautéed mushrooms, and pine nuts on a crispy pizza crust. This recipe uses dairy-free cream cheese and cheese, making it perfect for a vegan diet or those seeking a plant-based pizza option. Ready in just 20 minutes, this savory pizza is ideal for a quick and satisfying meal.

Ingredients

Pizza Base

  • 1 batch pizza dough (1/2 lbs) (gluten-free if desired)

Spinach Cream Mixture

  • 7 oz spinach (200 g) (fresh or frozen)
  • 3 garlic cloves
  • 2/3 cup dairy-free cream cheese (150 g)
  • salt, pepper to taste
  • 1 tbsp olive oil

Toppings

  • 3/4 cup dairy-free cheese (75 g) (shredded)
  • 5 oz mushrooms (150 g)
  • salt to taste
  • 2 tbsp pine nuts

Instructions

  1. Preheat Oven: Heat your oven to 400°F (200°C) to prepare for baking the pizza.
  2. Prepare Dough: Roll out your pizza dough with a rolling pin and place it onto a baking sheet lined with parchment paper, or use a pizza pan or stone if preferred.
  3. Prepare Spinach: If using frozen spinach, thaw and squeeze out the excess liquid. If using fresh, bring salted water to a boil, add spinach and cook 1-2 minutes until wilted, then squeeze and roughly chop it.
  4. Make Spinach Cream Mixture: Heat olive oil in a small pan, roast garlic for 30 seconds while stirring, then add dairy-free cream cheese and spinach. Season with salt and pepper, stirring to combine well.
  5. Assemble Pizza: Spread the spinach cream mixture evenly over the rolled-out pizza dough, then sprinkle the shredded dairy-free cheese on top.
  6. Bake Pizza: Bake the pizza in the preheated oven for 10-15 minutes until the cheese is melted and the crust is golden.
  7. Sauté Mushrooms: While the pizza bakes, heat some oil in a pan and fry mushrooms for 6-8 minutes until golden brown. Season with a pinch of salt.
  8. Toast Pine Nuts: In a separate pan, toast the pine nuts without any oil until fragrant and lightly browned.
  9. Top and Serve: Once the pizza is baked, top it with the sautéed mushrooms and toasted pine nuts. Serve immediately and enjoy!

Notes

  • You can use gluten-free pizza dough to make the recipe gluten-free.
  • Frozen spinach must be thoroughly squeezed to avoid soggy pizza.
  • Use fresh garlic for the best aroma and flavor.
  • To make this recipe non-vegan, substitute the dairy-free cream cheese and cheese with their dairy counterparts.
  • Toasting pine nuts enhances their nutty flavor, so do not skip this step.
