Description
A quick and flavorful garlic fried rice recipe that uses day-old cooked rice, infused with golden garlic, scallions, soy sauce, and a hint of spice to create a deliciously aromatic side dish perfect for any meal.
Ingredients
Garlic and Aromatics
- 15 cloves garlic, chopped
- 2 scallions, chopped
- fried garlic (for garnish)
- additional chopped scallions (for garnish)
Rice
- 2 cups long grain white rice (uncooked), cooked and dried overnight in the fridge
Seasonings and Sauces
- 3 tbsp neutral oil
- 1 tsp kosher salt (to taste)
- 1/2 tsp white pepper
- 1 tsp sugar
- 1/4 tsp MSG (optional)
- 1 tbsp light soy sauce
Instructions
- Prepare garlic oil: In a large pan or wok, heat 3 tablespoons of neutral oil over medium-high heat. Add the chopped garlic and cook for 1-2 minutes until it turns golden brown. Remove the garlic from the pan, leaving the infused oil behind.
- Sauté scallions: Add the chopped scallions to the garlic-infused oil and sauté for 15-30 seconds until fragrant. Increase the heat to high for the next step.
- Cook the rice: Add the day-old cooked and dried rice to the pan. Stir thoroughly for 3-4 minutes, or until the rice grains separate and appear relatively dry, ensuring even heat distribution and preventing clumping.
- Season the rice: Sprinkle kosher salt, white pepper, sugar, and optionally MSG over the rice, then add the light soy sauce. Mix thoroughly to combine all flavors evenly throughout the rice.
- Finish and garnish: Return the reserved golden fried garlic to the rice and mix gently. Garnish with additional chopped scallions and fried garlic before serving. Enjoy your flavorful garlic fried rice!
