Description

This classic Bruschetta recipe features fresh Roma tomatoes marinated with basil, garlic, balsamic vinegar, and olive oil, served atop crispy, garlic-infused baguette toasts sprinkled with parmesan cheese and broiled to golden perfection. Perfect as an appetizer or light snack, it delivers vibrant Mediterranean flavors with a delightful crunchy texture.

Ingredients

Tomato Bruschetta Topping

  • 6 Roma tomatoes (1 1/2 lbs, diced)
  • 1/3 cup basil leaves (chopped)
  • 5 garlic cloves (divided)
  • 1 Tbsp balsamic vinegar
  • 2 Tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • Balsamic glaze (optional)

Bruschetta Toasts

  • 1 baguette
  • 3 Tbsp extra virgin olive oil
  • 1/3 cup shredded parmesan cheese

Instructions

  1. Prepare Tomatoes: Core and dice the Roma tomatoes, then drain off any excess juice. Place them in a medium mixing bowl to prepare the topping base.
  2. Chop Basil: Stack the basil leaves, roll them into a tight tube, and thinly slice to create ribbons. Add the sliced basil to the bowl with tomatoes.
  3. Prepare Garlic: Finely mince all 5 garlic cloves. Mix 1 teaspoon of minced garlic into 3 tablespoons of olive oil and set this garlic-infused oil aside. Add the remaining minced garlic directly to the tomato and basil mixture.
  4. Season Tomato Mixture: Add 2 tablespoons olive oil, 1 tablespoon balsamic vinegar, 1/2 teaspoon sea salt, and 1/4 teaspoon black pepper to the tomato bowl. Gently stir to combine all ingredients, then set aside to marinate for 30 minutes to develop flavors.
  5. Preheat Oven: Set your oven to 400°F (200°C) and place an oven rack in the center position. This prepares the oven for toasting the bread slices.
  6. Slice and Prepare Baguette: Cut the baguette diagonally into 1/2-inch thick slices to optimize crunch and surface area. Arrange the slices on a baking sheet lined with parchment paper.
  7. Apply Garlic Oil and Cheese: Brush both sides of the bread slices generously with the prepared garlic-infused olive oil. Sprinkle the tops evenly with shredded parmesan cheese to add flavor and a slight crust.
  8. Bake and Broil Toasts: Bake the prepared bread slices in the preheated oven at 400°F for 5 minutes. After baking, switch the oven to high broil and broil the toasts for 1 to 2 minutes until the edges turn golden brown and crispy.
  9. Assemble and Serve: Arrange the toasted baguette slices on a serving platter. Spoon the marinated tomato mixture over each toast, drizzle additional extra virgin olive oil, and optionally add a swirl of balsamic glaze for extra flavor and presentation.

Notes

  • Draining excess tomato juice prevents soggy bruschetta toasts.
  • Marinating the tomato topping for at least 30 minutes enhances flavor integration.
  • Broiling gives the toasts a perfect golden color and added crispiness.
  • Balsamic glaze is optional but adds a sweet tangy finish.
  • Use fresh, ripe Roma tomatoes for the best taste and texture.
