Description

These Fried Deviled Eggs offer a crispy twist on traditional deviled eggs by breading and deep-frying egg whites, then filling them with a creamy, spicy yolk mixture enhanced with pickled jalapenos and Cajun seasoning. Perfect as a flavorful appetizer or party snack with a delightful contrast of textures and a kick of heat.

Ingredients

Eggs

  • 6 eggs (hard boiled and peeled)
  • 1 egg (lightly beaten for breading)

Filling

  • 2 Tablespoons pickled jalapenos (finely minced)
  • 1 Tablespoon pickled jalapeno juice
  • 1 Teaspoon Dijon mustard
  • ¼ Cup mayonnaise
  • 1 Teaspoon salt (divided)
  • 1 Teaspoon Cajun seasoning (divided)
  • ½ Teaspoon black pepper

Breading

  • ½ Cup all-purpose flour
  • 1 Cup panko breadcrumbs
  • Oil (for frying, about 2 inches deep in pan)

Garnish

  • Chives (freshly chopped)
  • Pickled jalapenos (sliced)
  • Additional Cajun seasoning (for garnish)

Instructions

  1. Slice the Eggs: Slice each hard-boiled egg in half lengthwise to separate the whites and yolks.
  2. Remove Yolks: Carefully remove the yolks from the egg whites and place the yolks into a medium bowl. Set the egg whites aside on a plate or serving platter.
  3. Prepare Filling: Into the bowl with yolks, add finely minced pickled jalapenos, pickled jalapeno juice, Dijon mustard, mayonnaise, half of the salt, half of the Cajun seasoning, and black pepper. Mix thoroughly until smooth and creamy. Set the filling aside.
  4. Set Up Breading Station: Arrange three shallow bowls: one with all-purpose flour, one with the lightly beaten egg, and one with panko breadcrumbs combined with the remaining salt and Cajun seasoning.
  5. Bread Egg Whites: Carefully dip each egg white half first into the flour, then into the beaten egg, and finally coat completely with the seasoned panko breadcrumbs.
  6. Heat Oil: Pour about 2 inches of vegetable or canola oil into a deep frying pan or heavy pot and heat over medium-high heat until the oil reaches 360°F (182°C).
  7. Fry Egg Whites: Gently lower the breaded egg whites into the hot oil and fry for 1 to 2 minutes per side until golden brown and crispy. Fry in batches if necessary to avoid crowding.
  8. Drain: Remove fried egg whites using a slotted spoon and transfer to a paper towel-lined plate to drain excess oil. Let them cool slightly.
  9. Fill Egg Whites: Using a spoon or a piping bag, fill the hollowed fried egg whites evenly with the creamy yolk mixture.
  10. Garnish and Serve: Sprinkle with additional Cajun seasoning, sliced pickled jalapenos, and freshly chopped chives for added flavor and color. Arrange on a serving platter and serve immediately.

Notes

  • Ensure the oil is at the correct temperature (360°F) to achieve a crispy coating without excessive oil absorption.
  • You can adjust the heat level by increasing or reducing the amount of pickled jalapenos in the filling.
  • These fried deviled eggs are best served fresh to retain their crispiness.
  • For a gluten-free version, substitute all-purpose flour and panko breadcrumbs with gluten-free alternatives.
  • Use a piping bag for a neater, more professional presentation when filling the egg whites.
